A crunchy new take on how to use those ramen noodles! Crunchy noodles, crispy veggies, and a sweet and savory dressing make this a perfect summer salad.
Mix together…
- 2 packs Lotus Foods Rice Ramen – crushed
- 2/3 cup shredded carrots
- 4 cups shredded cabbage
- 1 cup shredded red cabbage
- 1 cup scallions – chopped
- 1/4 cup sunflower seeds
Set aside. Then in a small bowl, mix together…
- 1/2 cup olive oil
- 1/2 cup honey
- 6 Tbsp. rice or white wine vinegar
- 1 tsp. crushed or minced garlic
- 1 tsp. grated fresh ginger
- salt and red pepper to taste
Pour dressing over veggie and noodle mixture. Toss to combine. Let sit for about 10 minutes to let flavors combine. Serve right away.
