Caroleena's Tuscan Kitchen
Local chef and cooking instructor, Carol Barrow, resided in the center of Florence and in the province of Tuscany for ten years where she learned regional cooking from the masters: restaurant owners, farmers, family and friends. She owned Ristorante Vien under the Volta dei Peruzzi in Florence for four years. Caroleena cracks the mysterious code of Tuscan cooking and translates her very special language into easy, delicious and healthy recipes. She will be sharing recipes and tips with us from time to time. Caroleena is available to cook for you in your home. Call her at 960-8875.


Finocchio Gratinee (Baked Fennel in a White Sauce)

Fennel is a very interesting vegetable - once you get to know it, you will be comfortable cooking with it. It has a strong flavor, but lies somewhere between celery and licorice! This recipe is an elegant side dish and can be used as a holiday dish or not! Italians don't steam their vegetables; they cook them until they are soft. American Southerners do the same - I figure that what they don't absorb in quality - they are sure to make up for through the quantity that they consume! Both authentic cuisines are delicious!

Ingredients
Fennel (one per person)
Béchamel (a white sauce {butter, salt, pepper, flour and whole milk})
Hand grated fresh parmigiano cheese

Trim the fennel until all that remains is the bulb (you can keep the 'beard' and substitute it for fresh dill). Trim the bottom also if it is discolored. Score a deep 'x' (about an inch) on the bottom of the fennel, this helps cook the inside faster and keeps it a little less mushy than if you don't score it. Boil the fennel whole in water that has been salted. You will want to taste the salt, but don't use too much salt for this recipe. When a fork enters the boiled fennel easily, it is ready. Remove it from the water. Cut the cooked fennel in wedges. Some pieces will stay attached and some will fall apart. Both are just fine. Preheat your oven to 350. We are now ready to prepare the béchamel. In a separate saucepan melt, but don't burn, a half of a stick of butter (salted or not, doesn't make a difference). Add a heaping tablespoon of flour, along with some salt and pepper. Mix this into the butter with a whisk. Slowly stir in about a cup and a half of warm milk. Stirring on a medium to low flame slowly will prevent lumps. Your béchamel will thicken up, but don't let it get too hard. Mix the béchamel with your already prepared fennel. Pour both into a baking dish. Spread evenly. Sprinkle a generous amount (cover the top) of hand grated fresh parmigiano on top. This dish is ready to serve when the cheese turns a golden brown.

The Board of Directors' Task Force has been working diligently now for the past four weeks to understand the values they hold relating to their investment in Weaver Street Market. After spending some time discussing the current system and the Board's motivations for change, the group compiled a rather hefty list of 57 values that they have been diligently honing down to a critical, interdependent set that can be passed on to the Board in a few short weeks.

The Task Force is getting down to the nitty-gritty, and observers are welcome, so come on down to the corner building this Tuesday or next to see what they come up with. The group's values work will be passed on to the Board, then to staff and presented to the larger ownership for review in early May. Questions? For the Love of Bread
What would you do for some fresh-baked Weaver Street Market bread? Well, these 190 folks spent the morning of Super Bowl Sunday racing 10 miles over hill & dale to claim themselves a bowl of homemade veggie soup and a big hunk of crusty sourdough bread at the 13th Annual Soup Bowl Duathlon. Organized by the multi-talented Matthew Lee (he made the soup, too!) of Traceworks Trail Advocates, the event raises money to build and maintain local bike trails.

Widely considered the toughest and most technical trail in the Piedmont, the race at Big Woods consists of a 2-mile off-road run, 6-miles of single-track and another 2-mile run. This year, the race observers were blessed with beautiful weather and a bright sunny day, while the racers themselves had the opportunity to appreciate good ol' Chatham County mud. One of Weaver Street's illustrious wine distributors, Mike Tiano, finished second overall, without his shoes - lost to the mud! We at Weaver Street are glad to donate to this great community event. Local folks having fun in local woods for a good cause with great bread - a surefire recipe for success! The good news for the rest of us is that the best bread around is always available - straight from the hearth oven to you at both our stores and served with your dinner at Panzanella, too! From the light, crusty French to the dense, chewy Desem, we have the bread for every occasion (including a muddy, grueling race through the woods).

This popular concert series returns with additional shows, so stop by Weaver Street Market to pick up your lunch and walk over to Century Hall each Thursday in January & February to enjoy free concerts featuring the best of local and regional Classical and Jazz artists in concert. Last year's shows were packed to capacity, so come early! This year, the focus is on Classical & Jazz. Free coffee is provided courtesy of Open Eye Cafe.

The New Orleans jazz piano of Corey "Hubcap" Sims, the soul-stirring tuba of David Morris, and the ever-grooving drumbeat of Mark Simonsen will come together as Hubcap's Dilemma, performing boogie woogie and New Orleans based jazz, gospel, and blues with just enough funk for you to shake off the winter cold. Corey will also be giving a special "Breakfast with an Expert" presentation at 9:30am with the band prior to the concert, which will be more educational in nature.
