The Doctor is In... (continued)
I really can't say enough good things about this company. Their products are either biodynamically grown (think of it as organically and holistically grown) or ethically wildcrafted. This wouldn't mean much if the end product wasn't fabulous, but it is! As a woman who has been trying out different skincare lines from department stores to drugstores to natural foods stores for almost 20 years (remember how everyone had Clinique in middle school?), I can tell you that I think this is the best line in the world. When you use Hauschka, you feel like you are in a spa, getting treated to the most sensual, luxurious preparations around. No matter how lazy you are, you will never skip washing your face if Cleansing Milk is waiting in your bathroom. Because the products treat the skin holistically (as opposed to fighting acne or dryness) the products are universal. They are created to encourage the skin to heal and balance itself. You can use the line all year long, with very few adjustments. Especially good for winter is the Rose Cream (no fake rose fragrance here, only the real, pure attar of rose); for summer, the normalizing day oil will actually help combat shininess on those humid North Carolina days. Like I said, I could keep going, but I'd better go tend the asparagus now. Just know that if you want the best for your skin, you can find it at WSM. xoxo

Recipe: Cinghiale - Italian Wild Boar Stew
Chef Peter McCloskey prepared this recipe for a special event at Panzanella with his own unique twist. You can make this stew with boar, beef, lamb, chicken, or TVP (textured vegetable protein).

Ingredients to serve 2-4 people

3 lb cubed roast or stew meat
2 large onions, chopped
2 carrots, chopped
1 stalk celery, chopped
1 1/2 cups good red wine
16 oz can plum tomatoes crushed by hand
1/2 cup sherry vinegar or cider vinegar
2 tbls fresh rosemary, chopped
2 tbls fresh oregano, chopped

1-2 dried Anaheim chiles - deseeded
1 tsp ground cinnamon
1/2 tsp ground cloves
1/2 cup pine nuts
1/2 cup black currants (or candied fruit)
1/2 cup raisins (or candied fruit)
3 oz bittersweet baking chocolate
2 tbls cocoa
6 oz or less tomato paste
salt & pepper to taste

Toast the peppers, pine nuts, cloves and cinnamon in a dry pot to release the oils. Set aside.

Sauté one large onion chopped and 2 chopped carrots until onions are translucent. Add one stalk of celery, sauté slightly. Add meat and brown on the bottom of the pan. Add 1-1/2 cups good red wine, plum tomatoes, rosemary, oregano, and stock to cover. Simmer until the meat is tender. There are two things to remember when choosing your wine, if you wouldn't drink it, don't cook with it; and the darker the meat, the darker the wine.

Sauté second onion till sweet and golden brown, remove, and deglaze pan with vinegar. Combine the pepper mix with the onion and all other ingredients and add to meat. Cook for one hour remove the Anaheim pepper and serve.
Lamb Sausages
Our meat department has been busting out all over with new ideas from fancy sausage varieties to Pinwheel steaks. The man behind these great ideas is Grady, who has been in the meat business for 35 years and learned the trade from his father, who had a grocery store for 18 years while Grady was growing up. Lately, Grady has been working on lamb sausages and has tried out a Moroccan sausage with curry, cinnamon, garlic and pomegranate wine. That batch sold out quickly, but today he's working on a Greek style, with feta cheese, anise, garlic, and white wine. Look for it in the case by Wednesday. Hungry today? Try one of the new Pinwheel Steaks with Jarlsberg cheese and spinach. Grady has more exciting ideas for future products and as time and space in the case allow he hopes to produce bratwurst, kielbasa and andouille. Yum!

Main Street Development Update
Last Wednesday, at the ArtsCenter, residents of Carrboro got a preview of the proposed redevelopment at 300 E. Main Street. They examined the site plans set up on easels and were intrigued by the three dimensional paper models complete with elevations.

Some residents questioned Laura Van Sant of Main Street Properties of Chapel Hill LLC, the firm that is planning the project. Others clustered around the model questioning Jim Spencer of Jim Spencer Architects. Everyone displayed interest and curiosity about what will go where, how it will look and whether all the businesses currently on site will have a place in the redevelopment.

The owners and architects welcomed all questions and were forthcoming and complete with their answers. They assured us that all of our concerns were truly valuable and have and will be taken into account in the continued planning.

The multi-use proposal containing residential, retail, cultural and office space, an outdoor theater, open arbors, eateries and a possible hotel on site will be truly mixed use. Eight to twelve foot sidewalks will keep it off the street and the recessed top floors will disguise the five levels. The use of brick and large windows will keep the building in line with the local architecture.

On or about May 1st, various committees in Carrboro will begin a yearlong review with the next step being the town council. Any residents with questions should contact either Main Street Properties or Jim Spencer Architects to have their concerns directed to the appropriate committee.

Most people that attended this three-hour open house left with the feeling that this project will be a positive improvement in keeping Carrboro vibrant as we move forward.
