We are pleased to announce that Weaver Street Market is the first retail customer for the newly formed Grower's Choice Cooperative. Like many farmer-owned endeavors, Grower's Choice, consisting mostly of family farmers from the Piedmont area, came into being as a result of necessity. The local processor was being mismanaged into bankruptcy. The next nearest processor that could meet the farmers' needs was in South Carolina - too far away and involving stressful transportation that would detrimentally affect the quality of the product. Growers Choice Co-op continued
The solution: under the leadership of Joe Moize and Alex Hitt, Weaver Street Market suppliers, purchase the failing processing plant, create the cooperative, transfer USDA permits, and hire management to oversee the operation.

We've been offering Grower's Choice Chicken for a couple of weeks now and it has met with rave reviews, so much so that we can hardly keep it on the shelf. But not to worry, we'll have plenty more and as the processing plant fine tunes their operations, product with be plentiful. Additionally, we'll be using the locally produced and processed chickens in our Food Service Department; Panzanella will use this chicken exclusively. We will receive our shipments the day after processing, which means that your poultry will be even fresher, because it hasn't had to travel to several warehouses and production facilities before it arrives at the stores.

We're working with the farmers and processing people, including Scott and Renee Henderson, the on-site managers; to make sure that this locally produced poultry meets your needs. The growers have agreed to the following principles:
- Poultry will be fed an exclusively vegetarian diet, and will not be administered any antibiotics or growth-promoting hormones.
- Poultry will be grown in a low-density environment, and will be subject to unannounced inspection by Weaver Street Market personnel to assure that the poultry is raised in a humane and sustainable manner. Weaver Street Market reserves the right to remove poultry from our product stream that does not meet our standards.

Special care is also used at the processing facility. Grower's Choice will be providing 100% air-chilled chickens to Weaver Street Market. This is important for several reasons. The product has a lower moisture content because it's never immersed in water. This means that you're paying for chicken and not water. And the chicken will taste better without water diluting the natural deliciousness. Lastly, the product will be cleaner, as water baths can transfer bacteria among products being processed.

We're really excited about these developments and the opportunity it affords us to meet our needs for high-quality poultry while supporting local agriculture. In these days of uncertainty about the safety of products produced far away and shipped globally, Weaver Street Market is proud to offer poultry that will be raised and processed within 50 miles of the stores. By adding locally produced chickens to our product selection, we hope to achieve a major increase in the percentage of products purchased from local vendors, a major goal for the cooperative. Recipe: Chicken Gumbo
This recipe is from Jaye Kreller, native of New Orleans.

When we make a gumbo it's usually for a crowd of people so this recipe is large - scale down as need be or be prepared to freeze the leftovers. Gumbo freezes very well.

Ingredients:
Carcass of one whole baked chicken and 1 lb boneless breast cubed or half a chicken cut up into small pieces.
Three or four links of smoked or andouille sausage sliced up

Chop:
2 cups of Vidalia onions
1 cup green pepper
6 cloves of garlic
In Cajun cooking the mix of onion, pepper and garlic is often called the "Holy Trinity"

1 cup flour
1/2 cup vegetable oil
1/4 cup of Worcestershire sauce
1 tbp salt or salt to taste
2 quarts water
1/8 cup chopped parsley

In a large pot make a dark roux with flour and oil (2 parts flour to one part oil for a roux). Sauté oil and flour over high heat till it starts to color, then reduce to medium heat and stir constantly till it reaches a dark caramel color - be prepared, this takes time. Add the chicken carcass and breasts or half chicken cut into small pieces and stir it around for a few minutes. Then add the Trinity and sauté into the roux. You may need to add a little water to stretch the roux more. Add water to cover contents plus two inches (in a large pot this should be about two quarts) and bring to a boil. Add Worcestershire sauce, sausage, salt. Boil for about 45 minutes. Serve with a little rice and sprinkle a little file over the top when served NOT while cooking. Remember gumbo is like a soup, it should have a fairly brothy or thin consistency, so add a little water and salt if it's too thick...
Weight Loss Fundamentals

So now that the indulgences of the holidays are over with, it's time to follow through with those promised New Year's resolutions about shedding a few pounds. I'm going to skip the yo-yo dieting suggestions and get right to the healthy alternatives that will help you stick to your plan. There are five major fundamentals of an effective weight loss program: low fat, high fiber, regular exercise, stress control, and an abundance of water.

Start by concentrating on healthy fats from nuts, seafood, and sea greens to curb the appetite. Fat is not bad and it is the body's main source of energy. "Good" fats help your body burn bad fats. Add CLA or Evening Primrose oil to the diet daily. Keep fiber in your diet every day and eat it in the morning. By adding it to breakfast it can cut up to 200 calories and keep you full until lunch. Make sure to get daily exercise because it releases fat from cells. Exercising before breakfast can help the body use fat stores for quick energy and will help cure the munchies all day! One pound of fat equals 3500 calories. A three mile walk burns 250 calories. In 2 weeks you will lose a pound of fat, that's two pounds a month and almost 30 pounds a year without changing your diet. So next, make sure stress levels are low. Stress boosts the hormone cortisol, which increases the appetite and cravings. Try brain balancers like St. John's Wort or Rhodiola. Also, try deep breathing because they help move lymphatic wastes. Finally, drink at least six 8oz glasses of water a day. Water naturally suppresses the appetite, promotes good digestion, raises metabolism, and reduces fat deposits. Stop in the Wellness Department for further suggestions about a healthy weight loss program.

Participate in Fiesta en Enero on Sunday, January 22, 2006 and help a group of UNC social work graduate students get to Nicaragua to build houses for poor families in partnership with Habitat for Humanity. We will travel to Leon, Nicaragua this March during our Spring Break to build as many houses as we can. This event is a fundraiser to help purchase plane tickets to Nicaragua and to purchase building supplies for our construction site. Donations will be accepted throughout the event and can also be made via our team website. We hope you'll join the fun and learn more about our trip, our team and the people we hope to support with our work. This is an event for adults and kids alike!

The ArtsCenter & Weaver Street Bakery bring you another round of: Beginning Artisan Bread Making Classes

Your experience is hands-on from start to finish in this course taught by our chief bakers in the WSM bakery. All materials will be provided.

Call The ArtsCenter at 929-2787 to sign up. Cost is $95 plus a $20 supplies fee. Classes meet for four weeks from 6-8 pm each session.

English-American author, and Weaver Street Market employee, Geoffrey Gilson, will be giving readings from his book, "Dead Men Don't Eat Lunch," the gripping tale of Geoffrey's discovery that the mysterious death of his closest friend (Margaret Thatcher's favorite speechwriter) was intimately connected to the friend being a senior officer of and assassin for MI6, Britain's foreign intelligence service.

Geoffrey is a natural storyteller and comic, and his animated readings bring to life the high drama - and sometimes low comedy - of his unique and ongoing adventures. Geoffrey is currently residing and working in the Chapel Hill area, while he puts the finishing touches to his book, and then sets about getting it published.
