| Recipes: Guacamole & Salsa | |||
We've got all the fixin's for your favorite guacamole or salsa recipes or try these recipes:Peter's Guacamole (Chef, Panzanella) 4 Avocados chopped 1 onion (small dice) The outer meaty part of 4 Roma Tomatoes - Diced Chopped Cilantro - 1 bunch Chopped Oregano - 1/8th cup 1/8th cup extra virgin Olive Oil Juice from 1 Lime 1 Teaspoon of Cumin Seed and 2 Dried Anaheim Peppers (toasted in pan and then ground in spice grinder) or 2 teaspoons of Chili Powder Salt, Pepper & Fresh Chopped Jalapenos to taste Brooke's Good & Spicy Guacamole (Beer Buyer, Weaver Street Market) 3 avocados 1/3rd cup red onion, chopped 1 tomato, chopped 2-3 cloves fresh garlic, chopped 1 jalapeno, chopped 2 t. ground cumin 1 t. chili powder 2 large pinches cayenne 2 dashes hot sauce 1/2 t. salt 1/2 t. fresh ground pepper 1/2 lime, juiced Mix ingredients together well, taste, and season futher to liking. Roasted Tomatillo Salsa Yields 3 cups 1 1/2 lb fresh tomatillos 5 fresh serrano chiles or jalapeno chiles 3 garlic cloves, unpeeled 1/2 cup fresh cilantro 1 large onion, coarsely chopped 2 teaspoons coarse salt 1 TBSP lime juice Preheat broiler. Remove husks and rinse under warm water to remove stickiness. Broil chiles, garlic, and fresh tomatillos on rack of a broiler pan 1 to 2 inches from heat, turning once, until tomatillos are softened and slightly charred, about 7 minutes. Peel garlic and pull off tops of chiles. Purée all ingredients in a blender. Salsa can be made 1 day ahead and chilled, covered. Makes about 3 cups. Gourmet, November 1999, Epicurious.com |

![]() So what would a Super Bowl Sunday be without beer and chips? Well, I can't fathom this idea, and don't want to! Although I cringe at the thought of football, I have to get my priorities in line for this decadent day. No matter your style, we have the beer and chips for you. So to what beer category do you subscribe? Or do you defy all categorization? Me, I'm kind of in the middle, and go by the philosophy: If it's good quality, I like it. First of all, I do admit to being very choosy about my wheat beers. Domestic attempts at this kind of beer don't do it the justice I desire. So if I have a hankering for a witbier to share with friends, I grab some of the German Franziskaner Hefeweizen for $12.99/12pk or $6.99/6pk. If I want to savor the flavor a bit more, I grab a single or two of the awesome Ayinger Brauweise for $2.99 each. So you hate wheat beer and love a good Pale Ale or IPA, eh? Well, to begin, we just brought in a Virginian Pale Ale from New River Brewery that's just great for $6.99/6pk. Next on my list, the Dogfish Head 60 Minute IPA for $8.49/6pk is my favorite everyday IPA and perfect for you IPA purists! So you're saying, what about dark beer, Brooke?! I have to say I love me some full-flavored brews. For a nice and tasty porter that won't completely spoil your appetite for munchies, try the Left Hand Black Jack Porter or the Flying Dog Road Dog Porter, each for $7.99/6pk. If you are focusing on the beer with snacks as an aside, do yourself a favor and grab a 4pk of the Old Rasputin Imperial Stout for $7.99 or a 6 pack of the Brooklyn Black Chocolate Stout for $8.99/6pk. You won't be disappointed, my friends. Now for those of you who just can't decide on one beer, we will have some yummy 12 pack samplers on hand from such breweries as Wolavers (Organic) and Flying Dog to name a couple. | Chatham Marketplace |
Last month, Weaver Street Market's operations manager, James Watts, and I went for a quick visit to the future location of Chatham Marketplace. Construction of the soon-to-be-open Co-op in Pittsboro is coming along right on schedule! The Co-op will be about 5000 sq ft (or about the size of our Southern Village store) and is located in the old Chatham Mills textile mill just a bit on the north side of Pittsboro's traffic circle. It's a beautiful, historic, downtown building with a good-sized lawn and plenty of space for other shops and offices still available.
Several years ago, Melissa Frey (pictured at left), a long-time Weaver Street Market volunteer who lives in Chatham County, decided that Pittsboro needed their own co-op. Melissa has been working tirelessly since then to see her dream realized. Now, with the support of the community and a strong Board of Directors, the co-op is expecting to open this spring. Like us, they plan to offer a full selection of organically and sustainably grown produce - as much as possible from local growers. (Kind of a no-brainer since the're in the heart of Chatham County.) The market will also sell a full line of sustainable grocery and dry-good products including deli, bakery, meat, bulk, dairy, vitamin and health and body care items (and maybe Weaver Street Market bread, too). One of the principles of co-ops is "cooperation among co-ops," and here at the Weave we want to do everything we can to help Chatham Marketplace be successful. If you live in Chatham County or know some folks who do, encourage them to buy a share in Chatham Marketplace and shop there once the store opens. And, it's looking like it'll be a real purty place, so consider stopping there sometime yourself - they'll have a juice bar, and you can say howdy to our fellow cooperators keeping it real here in the Triangle.

Ray Tolan's AssemblagesIMAGES: PAST & PRESENT February 13 - April 16 Don't look now, but the broken sewing machine spindles you placed in a recycling box on the sidewalk last year have been reincarnated in one of Ray Tolan's found art and metal sculpture assemblages. This self-described "sidewalk archeologist" enjoys the collecting as much as the construction and the finished work. His whimsical pieces, combining the most unlikely of materials and textures, elicit respect for their quality, but also a chuckle for the artist's audacity.
