By James Watts, WSM Operations Manager
Claudia Tolan (WSM's head of product selection) and I recently visited the Bowman family's Homeland Creamery. Located in Julian, NC, this family-run operation makes milk and ice cream for the Triangle and Triad market. Like Maple View Farm, Homeland Creamery is a full-service dairy, doing everything from growing the grain that the cows eat to bottling the milk and delivering it to the stores. However, they bottle their milk in plastic bottles. So we can now offer you locally produced milk, without added growth hormones or antibiotics, with the convenience of plastic. More

Recipe: Chunky Squash Soup
Local chef and cooking instructor, Caroleena, resided in the center of Florence and in the province of Tuscany for ten years where she learned regional cooking from the masters: restaurant owners, farmers, family and friends. She owned Ristorante Vien under the Volta dei Peruzzi in Florence for four years. Caroleena cracks the mysterious code of Tuscan cooking and translates her very special language into easy, delicious and healthy recipes. Caroleena is available to cook for you in your home. Chunky Squash Soup

I love this recipe not only because I choose the vegetables that I want, but also because a chunky soup in the cool weather makes me warm all over. I also put a little crushed red pepper in, that way the heat comes from two directions!

Ingredients;
Extra virgin olive oil
Garlic cloves (leave the skin on-prevents it from burning)
Salt, pepper, and crushed red pepper
Onion (coarsely chopped)
Carrot (coins cut into halves and quarters)
Celery (ribs cut in half, then sliced down the middle)
Cabbage (coarsely chopped)
Potato (diced)
Sweet potato (diced)
Pumpkin (diced)
Zucchini (coins into quarters)
Broccoli (chopped)
Cauliflower (chopped)
Broth (whatever kind you use - miso is also a good base)
White beans (one can is about the right size) cooked
Ditalini pasta (optional) cooked

So, you already understand what is going on; start cooking the oil, salt and peppers on a low to medium flame. I am not giving you quantities because using one of everything, except the cabbage (just use some - not a whole head) makes an awful lot of soup. Cut the onion up and add that. Start stirring. Cut up the carrot. Add that and keep stirring. Add the celery and keep stirring...(keep going with the other vegetables in the order of the ingredients list). What we are doing is mixing the flavors and the textures. The cabbage will keep it hearty. The starches will thicken it up. Now you can add your broth. The beans add texture and protein. Don't cook it for too long (about 45 minutes). No decent Italian would ever eat a soup like this without adding pasta - you can make up you own mind. Cook the raw pasta in it - about a handful per person (but keep stirring) or cook it on the side. Serve hot with a hearty piece of bread and...

Buon Appetito!
Don't forget - always cook with love and don't be cheap!

Portuguese Wine Dinner: Just a few tickets left!

Moving Past Port
Monday, October 16, 2006
7:00 - 9:30 pm

Portugal is on the brink of exploding onto the world wine scene. With Porto, sweet fortified wine, already familiar to wine drinkers, the next evolution is recognizing this country's dry wine production. Given the rise in fame for Spanish wine production, Portugal has all the makings to follow the same route. Indigenous varietals, old vines, varied climates, eclectic grape blends, unique terroir and now top quality dry wine production poise Portugal as the next big wine wave to hit the shelves and restaurant wine lists.

Join us October 16 at 7:00 pm for six courses and seven terrific wines from Portugal. We will explore some of the best regions of Douro and Vinho Verde. Find out what this country has to offer with a selection of dry whites and reds. Don't worry—of course we'll finish this fine meal with a tasty port. Forget what you have tasted in the past, the days of Mateus are long gone. The new generation is here and ready to wow your palate! Wines from Importers Eric Solomon/European Cellars and The Rare Wine Company portfolios will be presented by Seth Gross of the Henry Wine Group.

Tickets for this event are $40. Seating is limited, so purchase your tickets in advance at Panzanella or the Customer Service Desk at Weaver Street Market in Carrboro.
