Championing a Better World
WSM Hillsborough Foodhouse continued
The Food House facility meets one of our greatest needs: more space. Our production space in the Carrboro is severely undersized for the amount of food that we produce. The impact on customers is that we are unable to produce enough of several popular items or to introduce new items that customers request. The impact on staff is that that they work in an extremely difficult work environment. The workspace is very cramped. Staff are constantly having to work around each other and around other staff who enter the store through the kitchen, many ingredients are located in a remote cooler outside of the building, and the space is too hot—in all, a frustrating work environment in which it's hard to have a sense of accomplishment.

Last year, we looked at different options for creating more space, including the possibility of enlarging our production facilities in Carrboro. Among the options, an off-site facility was the only one that could provide enough space and, due to tight zoning restrictions, Hillsborough was the closest viable location. The Hillsborough Business Center location is desirable for several reasons. It's very affordable ($3.50 per sq.ft. compared to the $17 per sq.ft. we are pay in Carrboro), which allows us to more than double the size of our production facilities and offices. And it's located next to a neighborhood of mill houses similar to Carrboro, and adjacent to the future River Walk along the Eno River. This will allow us to create a workspace with a sense of character.

The Food House will have many benefits for our customers. It will provide sufficient space to keep all current products in stock, and to meet the needs of the coming Hillsborough store. It will be designed for better sanitation and better control of product temperature, which will improve food quality and safety. And it will allow us to add many new locally-produced deli, bakery, and meat products. The Food House facility will also include a warehouse, which will give us the capability to buy directly from additional small producers. As part of our Authentic Food focus, we are looking to reduce reliance on mass-produced natural products in favor of offering more products from small producers and more products that we produce ourselves.

The Food House will also have many benefits for our staff. There will be a generous amount of work and storage space, and a logical work flow from raw ingredients to finished product. The workspace will have skylights for day lighting, and windows for a view while working. There will also be ample air conditioning and fresh air exchange. The Food House will have a nice common area and outdoor break space for both food production and office workers.

In addition to the benefits, the Food House also presents a major challenge for our staff—the need to commute to a new work location. About a quarter of our staff will move their workplace 12 miles to the Food House. Our staff has been involved in planning the Food House, including identifying space needs and evaluating possible options to meet those needs, so there is recognition of the benefits of a new facility. However, there is also trepidation about having to commute, particularly for staff that now walk or bike to work. Our latest round of staff meetings about the Food House are focused on how the Food House will operate, including working on transportation needs, and identifying other job options at the Carrboro store for staff for whom the commute is not feasible.

Besides meeting our space needs, the Food House is incorporating as many energy-saving and environmentally friendly systems as possible. The food preparation process uses a lot of energy in heating and cooling food; these processes in turn create waste energy, some of which can be captured and reused. Waste heat from the refrigeration compressors will be used to make hot water for dishwashing, and waste heat from the ovens will be used in an Absorption Chiller to make chilled water for air-conditioning.

An innovative "Second Nature" refrigeration system will use a combination of anti-freeze and water, greatly reducing the need for refrigerants that contribute to global warming. Other features include adjustable lighting that lowers the lighting level to compensate for day-lighting, foam insulation in the middle of 12" walls reduces the heat and air-conditioning load, variable-speed hoods turn on and off automatically when cooking is sensed, cisterns to collect water and recycle it for toilet flushing, and the use of bio-diesel in our delivery truck.

The Weaver Street Market Pastry Department has whipped up some delicious ideas for Mother's Day treats starting with a special presentation of Coconut Wine Cake! These are just for Mother's Day, so you'll need to place a special order for one of these beauties. Choose a 6" or 8" size. Don't overlook our build-your-own cakes, either. First you get to choose the body: Carrot Cake, Yellow Sponge Cake, or Vegan Chocolate Cake. How about a fancy filling? We have Raspberry Preserve or Lemon Curd. Then the frosting: Chocolate Ganache, Cream Cheese Icing, or Vegan Chocolate Ganache, or one of our Butter Cream Frostings. Yum! Try lemon, chocolate, mocha, almond, or vanilla buttercream.

Top it all off with a lovely garnish: Chocolate curls, White Chocolate curls, or fresh fruit...and voilą your perfect cake! Cakes are available in 5 sizes: 6 inch, 8 inch, 10 inch, 1/2 sheet cake, or full sheet cake. Decorations are also available.

Weaver Street Market invites the community to enjoy an eclectic mix of local bands under the oaks in Carrboro. Bring a blanket or chair and relax with freshly prepared hot food from our Hot Bar or picnic on cheese, salami, and bread fresh from our bakery. Beer and wine will be available for sale inside the store.

Weaver Street Market loves to see people enjoying our lawn and connecting with their community. To keep this event a safe and fun place, we ask that you only bring friendly, well-behaved dogs on leashes and please clean up after them. We want the children who attend our event to have a safe and happy time too, so we ask that they not be allowed to climb the trees, including the Crepe Myrtles. Lastly, please enjoy the fountain from its perimeter. Thank you for your help in making this event safe and fun for everyone.

We know how much fun it is to sit on the lawn and drink some beers, but unfortunately North Carolina law forbids Weaver Street Market from selling six packs for consumption outside. You can buy beer singles from our cooler, or half-gallon Growlers from Carolina Brewery, but please—be kind to our cashiers and don't buy a six pack to take outside.

Weaver Street Market's Jazz & More! Brunch is under way! This family friendly event is a great way to start your Sunday. Inside, we'll have fresh scones, muffins and sweet pastries in our bake case; fresh, hot coffee and a barista to make that special coffee drink; and an array of eggs, grits, pancakes or French Toast to fill you up! Outside, under the oaks, you'll hear a range of local bands playing Jazz, Americana, Blues, and Bluegrass; keeping everybody happy and dancing.

Children and well-behaved dogs are welcome. Please keep the children out of the trees and fountain and dogs on leashes.

In support of our Latino and immigrant community, Weaver Street Market chose to donate 5% of store sales to split between El Pueblo, and El Futuro on Wednesday May 2. Together we raised over $3,100 to divide between the organizations. Thanks to all who shopped at Weaver Street Market in support of our community.

El Pueblo is a non-profit statewide advocacy and public policy organization dedicated to strengthening the Latino community. El Futuro is a Carrboro organization helping Latinos with mental health issues.
