Recipe: Medley of Italian Vegetables
Buon Giorno and Welcome to Tips and Recipes from Caroleena's Tuscan Kitchen! Local chef and cooking instructor, Carol Barrow, resided in the center of Florence and in the province of Tuscany for ten years where she learned regional cooking from the masters: restaurant owners, farmers, family and friends. She owned Ristorante Vien under the Volta dei Peruzzi in Florence for four years. Caroleena cracks the mysterious code of Tuscan cooking and translates her very special language into easy, delicious and healthy recipes. She shares recipes and tips with us from time to time. Italians like to stew vegetables; they stew string beans, cauliflower, fennel (which I never learned—I can do other things with fennel), potatoes, and many more. We are going to stew some vegetables that can either be eaten as a side dish, or as a pasta sauce with Parmigiano (Italian Parmesan) grated on top. You decide!

Ingredients

garlic cloves-skin still on
onion-sliced any way
zucchini-sliced in quarters and in halves
green pepper-cut into cubes
(optional) eggplant- cut into cubes (adding this turns the dish into ratatouille)
roma tomatoes-fresh and cut into cubes OR canned, drained San Marzano(s)
extra virgin olive oil
salt and pepper

Heat up the oil in any size pan, depending on how many vegetables you prepare. A lot of vegetables; use a big pot, just two of you? Use a small pot. Add the garlic cloves with the skins on. (This may very well be the best tip I give you; When possible, especially when roasting, frying or sautéing, leave the garlic skin on, The flavor will cook in, but the garlic will not burn. It will only enhance your dishes.) First add the onions, salt and pepper. Stir them around. Add the zucchini—stir it around. Add the pepper(s). Stir them around. Add cubed, fresh plum tomatoes or you can squish up a can of (drained and) rinsed peeled tomatoes. Cover and simmer until the vegetables are tender. The vegetables will make their own broth, so there is no need to add water. Fresh, delicious and a very healthy side dish. Put it on pasta if you want. Add some Parmigiano or aged sheep cheese (i.e. Pecorino Toscano invecchiato) if you like. Buon Appetito!

We want the children who attend our event to have a safe and happy time too, so we ask that they not be allowed to climb the trees, including the Crepe Myrtles. We know how much fun it is to sit on the lawn and drink some beers, but unfortunately North Carolina law forbids Weaver Street Market from selling six packs for consumption outside. You can buy beer singles from our cooler, or half-gallon Growlers from Carolina Brewery, but please—be kind to our cashiers and don't buy a six pack to take outside.

Inside, we'll have fresh scones, muffins and sweet pastries in our bake case; fresh, hot coffee and a barista to make that special coffee drink; and an array of eggs, grits, pancakes or French Toast to fill you up! Outside, under the oaks, you'll hear a range of local bands playing Jazz, Americana, Blues, and Bluegrass; keeping everybody happy and dancing.

Children and well-behaved dogs are welcome. Please keep the children out of the trees and fountain and dogs on leashes.

Carlo Petrini, founder and president of Slow Food and the slow food movement, will be lecturing in North Carolina on the meaning and value of food traditions, defending biodiversity, and protecting food that is good, clean, and fair. Petrini founded Slow Food in Italy in 1986 in opposition to the encroachment of fast food restaurants. He has worked for the last twenty years to educate people to the value of preserving local and regional ways of growing, processing, and preparing food. Rather than limit our food choices to one or two breeds of chicken or beef or vegetables, he encourages the preservation of heritage breeds, and heirloom vegetable varieties.

Petrini's approach to preparing and eating food brings an awareness of taste and process to food that makes eating a delight to the senses and raises it to the level of an experience, not just something to be hurried through standing up, sitting in a car, or by oneself.

This rare opportunity to hear Carlo Petrini locally has been sponsored by the Center for Environmental Farming Systems. The lecture is free and open to the public.

The Southern Village Farmers' Market has begun it's fourth season. And with our new season are new Market members. Susie Whaley of Knot Hill Flower Farm has brought beauty to the Market with her Dutch Iris, Agrostemma, Snap Dragons and Larkspur. Captain John S. Pope Farm in Cedar Grove raises grass-fed Dorper lambs. These lambs are known for their tasty and nutrient rich meat. Come by the market to see pictures of their lambs and farm. Wondered about North Carolina wines? Wonder no more. Benjamin Vineyards located in Graham, NC is with us every Thursday. Come sample some of their unique varieties like Chardonel, Chambourcin, and Carlos.

While we may be small in numbers, we are large on variety. This week at the Market you can find: arugula, broccoli, cauliflower, cucumbers, cut-flowers, lettuces, English peas, green garlic, spinach, sugar snaps, strawberries, green house tomatoes, squash, zucchini, eggs, meat: beef, lamb and pork; cedar crafts, loom-woven rugs, baked goods, chai tea and limeade.

We are on the Village Green across from the Lumina Theatre every Thursday until the end of August from 4 - 7 PM. All of our vendors live and produce what they sell within 50 miles of the Market. Professional actors will present dramatic readings from literature, memoirs, commentaries, poems and personal journals on living and coping with cancer.

Hillsborough Film Series

Walkable Hillsborough Day
6th Annual Walkable Hillsborough Day
Saturday, June 2nd
9am-noon at the Old Courthouse in downtown Hillsborough


This year, Walkable Hillsborough Day will focus on the town's pocket parks with three guided walks of varying lengths and exertion. The guided walks will leave from the Old Courthouse at 9 a.m. Participants will meet back at the courthouse at 10:30 a.m. for activities, prizes and refreshments. Information from various organizations, such as the Eno River Association, Trading Path Association and Orange County Health Department, will also be on display. In the case of rain, the event will take place at the Masonic Lodge, 142 W. King St.

The Walkable Hillsborough Coalition and Hillsborough Parks and Recreation Board are sponsoring the event on National Trails Day, when many communities will get outside to celebrate footpaths and regional connectivity. Participants will be able to choose from the following walks:

Turnip Patch Park - 50 minutes, with a shorter 20-minute option available. Stops along the way will include Mayo Pocket Park on King Street, Cedar Walk, Weaver Street Market and Orange County offices construction sites, Turnip Patch Park, Margaret Lane Cemetery and the Farmers Market.

Hillsborough Heights Park - one hour. A shuttle will take participants to Hillsborough Heights Park on Terrell Road, where they will walk back to the courthouse. Stops along the way will include the nature trail to Central Elementary—where school connectivity and the Nash Street sidewalk project will be discussed—Turnip Patch Park, Weaver Street Market and Orange County offices construction sites, Cedar Walk, Mayo Pocket Park and the Farmers Market.

Riverwalk - one hour, along the south bank of the Eno River. This walk will follow the course of the planned Riverwalk. Participants will see 18th- and 19th-century landscape artifacts, old footpaths and a segment of an early railroad bed. Organizers plan to have the trail cleared for the hike, but walkers should dress for long grass and wear footwear suitable for uneven surfaces. Poison ivy may be encountered, and insect repellant is suggested.

New Art Show

"Brushes with Life: Art, Artists, & Mental Illness"
May 22, 2007 through July 29
Public Reception: Monday, June 11, 5:30 - 7:30pm

The name of this exhibit is also the name of a patient art gallery located on the 3rd floor of the UNC Neurosciences Hospital outside of the Psychotic disorders inpatient unit. It is part of the Schizophrenia Treatment and Evaluation Program (STEP) at UNC, which provides inpatient and outpatient care of people dealing with psychotic symptoms or illnesses such as Schizophrenia or Schizoaffective disorder. The gallery features artwork and poetry from STEP inpatients, clinic outpatients, and clients from Club Nova, a local clubhouse for the mentally ill. The initial goal of the gallery was to give our artists a permanent art space to display their creativity and art to a wider audience. Additionally we hoped to promote art and healing. We also target stigma associated with mental illness demonstrating people with serious mental illnesses such as Schizophrenia, Schizoaffective, and Bipolar disorder can be productive and creative.

"Brushes With Life" has also had numerous traveling shows around the state over the years including the NC Museum of Art and the RDU International Airport. This August the gallery is slated for an exhibit at the Carrboro Art Center. The permanent collection is on display on the 1st floor of UNC Neuroscience Hospital.

This exhibit will also include Peer Tree mirror frames handcrafted by artisans using the traditional techniques of genuine gold leafing and painted finishes. Each frame is a work of art uniquely designed, crafted, and signed by the artist.
