Recipe: Butternut Squash Soup
Butternut Squash Soup
From The Flavor of New England Cookbook

1 butternut squash peeled, seeded, cubed
1 diced onion
1 apple peeled, cored, sliced
2 chicken bouillon cubes with 2 cups boiling water
1-1/2 cups milk
2 tbsp brown sugar or less
pinch of salt & pepper
2 tbsp butter
prep time 25 min
cook time 30-45 min

Place prepared squash in large pot with apple and ½ onion.
Pour in dissolved bouillon, cover pot, and cook until squash is tender.
Melt butter in saucepan and cook remaining onion until translucent and golden.
When squash is soft, take a hand mixer and mash the squash right in the soup pan.
(This is a lot easier and uses fewer dishes.) Add the milk-reheat gently.
Add the sugar until dissolved and then add the sautéed onion and butter.
The consistency of the soup will be pureed with a chunk of squash here and there.
Serves 4-6.

1 cup cream

Fair Trade Dessert Menu

Fair Trade Dessert Menu

This is your last week to come in and treat yourself to our Fair Trade Dessert menu items. We've created some luscious desserts using mainly ingredients from Fair Trade and Cooperative providers as a celebration of National Fair Trade & Cooperative Month.

Fair Trade Provides Economic Security

The Fair Trade Certified™! seal guarantees that more of every dollar spent on a Fair Trade product makes it back to the men and women who grew it. Between 1999 and 2005, coffee farmers alone earned approximately $75 million in additional income selling to the U.S. Fair Trade market.

A portion of all Fair Trade prices is reserved specifically for social and environmental projects. By the end of 2005, Fair Trade farmers and farm workers had earned more than $6.5 million in "social premiums" from the U.S. market, all while earning dramatically higher incomes. Democratically organized farmers and workers elect how to best invest these funds, based on their own local needs. This represents a dramatic, effective departure from traditional, aid-based economic development models.
