Easter Goodies continued
Our wine merchandiser, Peg Todloski, recommends the March wine specials to pair with dinner. If you're having ham try the Seifried Sauvignon Blanc - a New Zealand Sauvignon Blanc classically styled with intense flavors of sweet garden peas, grapefruit and citrus, and an incredibly lively finish or the Hirschhof Gewurztraminer - a wonderfully made German Gewurztraminer at a great price. Perfect for spring, it has aromas and flavors of fresh flowers, peach, and nectarine. For a lamb dinner try Castaño Monastrell - a tasty Spanish red, organically grown and 100% Monastrell (Mourvedre). Irish Beef Stew Recipe

Ingredients:
• 1/4 cup olive oil (This Month's Co-op Advantage Special: Bionaturae Organic Extra Virgin Olive Oil $7.99, 17 oz., save $5.00!)
• 1 1/4 pounds sirloin steak, cut into 1-inch pieces (This week's WSM special: Niman Ranch USDA all natural Beef Sirloin Steaks $7.99/lb, save $3.00/lb!)
• 6 cups beef stock or canned beef broth (This Month's Co-op Advantage Special: Imagine Organic Beef Broth in box $2.49, 32 oz. box, save $1.20!)
• I cup of Guinness beer (This week's WSM special: Guinness 6-pack $7.99, save $1.00!)
• 1 cup of fine red wine (Everyday Low Price: Alcion Cabernet Sauvignon or Malbec $3.99)
• 2 tablespoons tomato paste
• 1 tablespoon brown sugar (This Month's Co-op Advantage Special: Wholesome Organic Dark/Light Brown Sugar $2.99, 24 oz. pckg, save $1.20!)
• 1 tablespoon dried thyme (This Month's Co-op Advantage Special: Simply Organic Spices on sale from $2.49 - $3.49 selected varieties 2.21-3.7 oz., regularly $3.49-$4.69)
• 1 tablespoon Worcestershire sauce
• 6 large garlic cloves, minced
• 2 bay leaves
• 2 tablespoons (1/4 stick) butter
• 3 pounds gold potatoes, peeled, cut into 1/2-inch pieces (about 7 cups) (This week's Manager's choice special:Yukon Gold Potatoes .69/lb)
• 1 large onion, chopped (Everyday Low Price: Yellow Onion 3lb bag 2/$3.00)
• 2 cups 1/2-inch pieces peeled carrots (Everyday Low Price: Bunny Luv Organic Peeled Carrots, 1lb bag 2/$4.00)
• Salt and Pepper
• 2 tablespoons chopped fresh parsley

Directions:
1. Heat olive oil in heavy large pot over medium-high heat. Add beef and sauté until brown on all sides, about 5 minutes. Add garlic and sauté 1 minute. Add beef stock, Guinness, red wine, tomato paste, sugar, thyme, Worcestershire sauce and bay leaves. Stir to combine. Bring mixture to boil. Reduce heat to medium-low, then cover and simmer 1 hour, stirring occasionally.

2. While the meat and stock is simmering, melt butter in another large pot over medium heat. Add potatoes, onion and carrots. Sauté vegetables until golden, about 20 minutes. Set aside until the beef stew in step one has simmered for one hour.

3. Add vegetables to beef stew. Simmer uncovered until vegetables and beef are very tender, about 40 minutes. Discard bay leaves. Tilt pan and spoon off fat. Transfer stew to serving bowl. Sprinkle with parsley and serve. (Can be prepared up to 2 days ahead. Salt and pepper to taste. Cool slightly. Refrigerate uncovered until cold, then cover and refrigerate. Bring to simmer before serving.)
Serves 4 to 6.

"That's my 'pesticide' these days," smiles Neill Lindley, pointing to a tower of gourds that provide nesting space for insectivorous purple martins. "They eat just about everything."

After a quarter century of conventional dairy farming, Neill and Cori Lindley made a choice that would change their lives: they decided to go organic. This was no small feat, as 50 years of traditional farming had taken its toll on their land.

The process of organic certification is long and hard. Animals can be certified after a year, but land requires at least three years of work to remove residual chemicals and rebuild depleted soils. Following consultation with veterinarians and soil experts, the Lindley's decided to join Organic Valley's farmer-owned co-operative, Cooperative Regions of Organic Producer Pools, CROPP. Although Organic Valley is a national brand, the co-op eschews large-scale factory farming and instead works to create regional networks of farmers across the country. This partnership is mutually beneficial. Organic Valley receives high-quality organic milk from small family farms, and folks like the Lindley's receive vital support during the transition to organic farming and beyond.

"Organic Valley has been so supportive," says Cori. "They really put the farmers first. The people in the co-op want to be a part of the local community. They make an effort to learn about the area and support our local organizations."

Organic Valley works to maintain the link between local farmers and local markets. The milk from the Lindley's 100 grass-fed Holsteins goes to one of two North Carolina dairy processing plants that are certified to handle organic products. After being pasteurized and packaged, the milk goes straight to local grocery shelves.

As part of the process of transitioning to organic farming, the Lindley's downsized their herd from 300 to 100 cows. "Our focus is on quality these days, not quantity," explains Neill, who runs the dairy with his father and two assistants who have worked with the family for many years. Neill is enthusiastic about the changes organic farming has brought to his dairy, and hopes to rebuild his herd back to 300 once the farm's transition is complete. He is also eager to recruit other farmers to join the organic revolution.

"I just want to get more people to try this. It's tough, but you really feel the benefits every day. You see it in the animals; you see it in the land. It was a gut feeling I had to go organic, but it was the best decision I ever made."

Our next meeting will include four monitoring reports from the General Manager on the following Board policies: General Manager's Communication and Support to the Board (2-8), Products and Services (2-2), Treatment of Vendors (2-12), and Financial Condition (2-6). You can review these policies online here. The Board will also be discussing the survey of WSM owners conducted last year, which sought comprehensive owner feedback on WSM performance, and it will be looking at the preliminary board budget for the next fiscal year. Coming up in April, the Board will be discussing the Task Force report on elections.

Board meetings are generally on the third Wednesday of the month and owners of the Co-op are always welcome to attend: a new feature of the meetings is an open session at the beginning in which owners can address the Board on any topic. You can also provide input to the board at any time by sending comments to the Board here.

Muriel Williman from the Orange County Solid Waste Management Department will conduct a composting demonstration to teach the principles of both indoor composting with worms and outdoor composting using methods ranging from a ditch to manufactured units. Muriel will have samples of a wide variety of feedstock that can be used to create compost. She will also bring an active indoor worm bin to demonstrate worm bin building, maintenance, and harvesting.

Because of drought conditions, compost is especially critical this growing season to sustain lawns, landscapes, and gardens. Compost holds moisture and nutrients in soil so plants can take them up through their roots as needed. Every day is Earth Day, when you compost.

Anybody anywhere can make their own compost! Even apartment dwellers with only a couple of houseplants can stay in touch with the earth and make a windowsill garden thrive by composting indoors with worms. "A single person can reduce the amount of waste they produce, depending on their diet, by as much as 40% simply by composting their fruit and vegetable scraps," Muriel reports. "You cannot have a serious discussion about sustainability, or conserving water or saving the earth without talking about composting too."

Endurance Magazine is proud to produce 2 great community-building events to Carrboro during the month of April.

The Carrboro Classic Endurance Sports Festival takes place at McDougle Middle School on the morning of April 6th. This event consists of 2 duathlon races as well as the Wild West 8k. The Carrboro Classic benefits the Swim for Smiles Campaign as well as Durham Habitat for Humanity.

The Tar Heel 10 Miler is a landmark event that showcases downtown Carrboro and the beautiful surrounding area. This event is being held in conjunction with the Franklin 5000 as well the Earth Day celebration on the morning of April 26th. The Tar Heel 10 Miler benefits the Chapel Hill-Carrboro YMCA's Strong Kids Campaign. We're happy to extend a FREE race entry for any downtown Carrboro business.
