Hillsborough Store Update continued
The store manager and several department and support managers were on hand to lead people through the store's layout and discuss many things important to Weaver Street: local agriculture, our triple-bottom line, living wages, and finding great deals on pastry cases at auction.

Many residents took the opportunity to join the Co-op, and many of our existing owners chose to purchase Founding Shares, non-voting stock in the cooperative, to help our capital campaign.

Polaroid photos of owners who stopped by to visit remain displayed in the front windows of the store as a way of thanking everyone for their support (and patience) while we're working to get the store open.


As long as construction on our Food House over in west Hillsborough continues on track, we expect to open the store before the end of May.

Recipe: Strawberry Shortcake
Emily's Mom's Strawberry Shortcake

(vegan version below)
Ingredients:
2 cups flour
2 tbsp sugar
3 tsp baking powder
1/2 tsp salt
1/2 cup butter or margarine
1 beaten egg
2/3 cup light cream or milk
strawberries and sugar
whipping cream
A day before eating, slice strawberries and mix them with sugar in a container. Monitor the amount of juice produced after several hours, and keep adding sugar and mixing until you get a sufficient amount of juice.

To make the shortcake:
Combine the flour, sugar, baking powder, and salt. Cut the butter or margarine into the dry mix with a pastry cutter until it looks like course crumbs. (If you don't have a pastry cutter, let the butter or margarine soften a little and use a fork.) Combine the egg and milk and add to the mix, stirring just enough to moisten.

Spread the dough in a greased 8-inch round pan or muffin cups. Bake at 450 degrees for 15-18 minutes; the top should be starting to brown. Cool and remove from pan. Serve with juicy strawberries and whipped cream.

Vegan version:
This shortcake works well as a vegan dessert. Use margarine instead of butter and Egg Replacer instead of the egg (1 1/2 tsp Egg Replacer, 2 Tbsp water, mixed well). Use coconut milk instead of the milk. The batter is supposed to be fairly stiff, but it might be a little too stiff with coconut milk, so you can add some water to help it out. This recipe also works with soy milk or even water instead of milk, but the shortcake does not rise quite as nicely as it does with coconut milk; also, Thai Kitchen's coconut milk is on sale through the end of April!

Save some of the coconut milk fluff (from the top of the can) to use as vegan whipped "cream," or try this vegan whipped cream from my friend Mary:
Put 1 cup of soy milk in a blender. Turn it on high and add 1/4 cup vegetable oil. Keep the blender on and drizzle in another 1/4 cup vegetable oil. (Drizzle! Patience is key here.) As the oil goes in, the mixture should start to stiffen (well, somewhat). Add 1 tsp vanilla and 1 Tbsp maple syrup at the end.

Every first Sunday of the month, May through October, from 11 am - 1 pm, Weaver Street Market will host nonprofit groups from our community. Local, non-profit groups will have informational tables where you can find out about the good works of our local charitable groups. Come prepared to learn, to donate, and maybe find a group you'd like to volunteer with!

If your organization would like to attend: Space is limited and assigned on a first come basis so we ask that you sign up at least a week in advance and limit the number of times you sign up to three (3) per year. Also, your group must be a 501(c)(3). To apply, please email Cat Moleski or call 919-929-0010 ext 132. Your request will be confirmed by email or phone. Come out and let everyone know what your group is doing in the community!!

Join us for a tasting of wines from the wonderful regions of Germany. From the Mosel in the west, to Franken in the east, and of course some Rhein wines in the middle; we'll explore all the amazing wine styles this country has to offer. We'll showcase small production, hand-crafted wines from some of Germany's top producers. With amazing fruit and minerality, German wines are extremely versatile and are often the best matches to a variety of foods. We'll taste estate-grown wines from Germany's foremost wine regions with fabulous dishes created by Panzanella's Chef, Chris Capron.

The cost of this event is $45 per person; space is limited, so reserve early. Please pay in advance and pick up a ticket for this tasting at either Panzanella or the customer service desk at Weaver Street Market in Carrboro.

A Group Art Exhibit
Celebrating the 13th Annual Piedmont Farm Tour
Now through June 1, 2008
The Local Farms / Local Art Artist Reception at Panzanella on Monday evening, April 28 was a big, fun gathering of artists, farmers, and other art lovers. Luscious, local foods were served, including cheeses from the Chapel Hill Creamery and Celebrity Dairy, sauerkraut, chutneys, and cakes made by The Farmer's Daughter in Carrboro, NC Hoop Cheese from Ashe County, sausages from Hurdle Mills, and breads made by the WSM bread bakers.

The exhibit includes painting, drawing, and photography by 26 NC artists. From April 1 - 27, Panzanella guests were given ballots and enthusiastically voted for their favorite piece in the show. The top 3 vote winners won Weaver Street Market / Panzanella Gift Cards. First prize ($100 gift card) was awarded to Nathalie Worthington for "Ned", an acrylic portrait on wood of an enchanting billy goat. Second prize ($50 gift card) went to Carroll Lassiter for her breathtaking oil painting, "Parrish Field". Third prize ($25 gift card) was won by Phyllis Burns, for the beautiful watercolor, "Sunlight in the Henhouse". So far four pieces in the exhibit have been purchased.

Be sure to come by before the show comes down on June 2 to enjoy a unique and diverse show of local artwork inspired by NC farms.
