Pumpkinesque Pleasures Pumpkins. It's an annual tradition: pumpkins will be everywhere this month. In fact, pumpkins are so widespread they grow on every continent (except Antarctica). To celebrate this ubiquitous seasonal squash, we're baking up pumpkin breads, pumpkin pies, pumpkin cupcakes, pumpkin cheesecakes and pumpkin danishes. Fresh pumpkin pie is the signature dish of autumn, a timeless treat that eases you into the days of sweaters and cider. A warm slice of pumpkin bread spread liberally with cream cheese almost makes up for the end of summer. While pumpkin cheesecake is the sort of decadent treat that can help you forget the imminent havoc of the holiday season. More |

| Recipe: Old Fashioned Pumpkin Pie | |
Ingredients• 2 cups of pumpkin pulp purée from a sugar pumpkin* or from canned pumpkin purée • 12 oz. of evaporated milk • 1/2 cup packed dark brown sugar • 1/3 cup white sugar • 1/2 teaspoon salt • 2 eggs • 2 teaspoons of cinnamon • 1 teaspoon ground ginger • 1 tsp allspice • 1/4 teaspoon ground nutmeg • 1/4 teaspoon ground cloves • 1/4 teaspoon ground cardamom • 1/2 teaspoon of lemon zest • One 9" WSM frozen pie shell 1 Preheat oven to 425°F. 2 Mix sugars, salt, and spices, and lemon zest in a large bowl. Beat the eggs and add to the bowl. Stir in the pumpkin purée. Stir in milk. Whisk all together until well incorporated. 3 Pour into pie shell and bake at 425°F for 15 minutes. After 15 minutes reduce the temperature to 350°F. Bake 40-50 minutes, or until a knife inserted near the center comes out clean. 4 Cool on a wire rack for 2 hours. Serve with whipped cream. Serves 8. *Preparing a pie pumpkin: Slice a pie pumpkin in half and clean out the seeds and string (look for them at Weaver Street Market). Place cut side down on a cookie sheet and bake at 400°F for 30-45 minutes (depending on the size of the pumpkin) until tender. Cool and scoop the pumpkin flesh out. Mash with a potato masher through a collander till smooth. Place mash in a strainer and let stand for 15-20 minutes to drain any excess water from pumpkin mash. Can be frozen now for Thanksgiving. A 6-8" pumpkin will make 2-3 cups of mash. Roasting your pumpkin seeds: Separate seeds from the pumpkin flesh and rinse. Toss lightly with olive oil and salt. Spread out on a cookie sheet in one layer and bake at 325°F for 15-20 minutes. Flip over half-way through and bake until lightly browned. Delicious! |

| WSM Pastry Pie Shells | |
Weaver Street Market stocks their delicious pie crusts in the frozen section. Let the pie shells defrost at room temperature for about 15 minutes. Prick the bottom and the sides to prevent bubbles. Heat oven to 350° and cook pie shell for about 10 minutes. Let cool before filling. When you're cooking your pie, if the edges start getting too dark before the pie is done, cover the edges with aluminum foil to prevent burning. Take 3-4 4" strips and carefully form around the edges. |

| Burwell Table d'Hôte | |||
November 7, 2008The Historic Hillsborough Commission proudly announces its newest fundraising event—Burwell Table d'Hôte. This dinner event pairs talented volunteer chefs with gracious hosts in some of the most beautiful and interesting homes in Hillsborough. Six gourmet menus with wines specially selected to complement the dinner will be served. Reservations are required, and will be accepted beginning October 21. We are pleased to have the following hosts and chefs participate in this event: chefs Mark Day, Jane Holding, Fran McCullough, Ippy Patterson, Aaron Vandemark, and Stephany Weston; with hosts Nancy & Gil Ciocci, Nancy and Stephen Demorest, Susan Frankenberg and Marion Barnett, Alice and Joe Moore, Mary Ann and Jess Peter, and Kay and Phil Singer. But which chef is paired with which hosts? That surprise is part of the fun. The dinner event takes place on Friday, November 7. Beginning on Tuesday, October 21, the Burwell School will accept reservations for entire tables at $75 per guest - $600 or $750 per menu/table. You'll purchase a table knowing the menu and how many people it serves, but you won't (yet) know who will be your chef or your hosts. If any menus remain unsold after one week, reservations for individuals, couples, and smaller groups (at $75 per person) will be accepted starting on Tuesday, October 28. On Friday, November 7, at a pre-dinner reception at the Burwell School Historic Site, you will learn the name of your chef and hosts. Dinner will be served in the host home immediately following the reception. Menu booklets detailing the menus along with full details of the event and of the reservation process are available now from the Burwell School Historic Site, 319 North Churton Street, or by calling 732-7451. This event is a fundraiser for the Bruwell School Historic Site. |
