| Seductive Salad | |
From Wendy Hayes, Carrboro Produce ManagerNow I am going to share with you April's Famous Salad, which is also known as "The Seduction Salad," it's just so good. It's be perfect for a special meal and it's got so many tastes and textures going on that you don't really need much else, just a yummy baguette, crisped up in your oven. Oh, and some of your favorite wine. Ingredients: • Olive oil • Garlic, minced • 4-5 portobello mushroom caps • Red onion • Red wine • Italian seasoning • 1 red bell pepper • 1 yellow bell pepper • 1 ripe avocado • 1 ripe pear of your preference • Paper-thin slices of red onion • Mixed baby greens • Balsamic vinegar • Toasted walnuts (you can toast 'em yourself!) • Salt and freshly ground pepper, to taste To prepare: 1. Sauté sliced onion (you don't need the whole thing if it's large) and minced garlic in olive oil until they begin to soften. 2. Add sliced portobellos and 1/2 tsp. of Italian seasoning. 3. Cook for about 20 minutes on medium-low heat, then add a cup of red wine and cook on low heat for about 45 minutes, until the liquid is cooked off. 4. While the mushrooms are cooking, broil the peppers in a generous amount of olive oil, turning them as the sides blacken. 5. When the peppers are thoroughly black on the outside, (keep a close watch on them, and don't start a fire in your oven!) plunge them into cold water, which will cool them and allow you to remove the blackened skins easily. Also clean out the insides of the peppers (the seeds). 6. Then slice the peppers into medium-thin strips. DO NOT TOSS OUT THE OLIVE OIL! Combine a couple of TBS of it with the balsamic, salt and pepper to make the dressing. 7. Now all you have to do is slice the other ingredients (avo, pear, left-over red onion). 8.Toss the greens with dressing, plate them, and arrange everything on top in a gorgeous way. Recently she spent some time researching the nature of sweeteners to ensure her Sea Salt Caramels are supremely superb. Following up on customer suggestions at a Weaver Street Market product tasting, Leslie was inspired to learn more about alternatives to corn syrup. She hit upon Agave nectar, a honey-like liquid derived from the juice of the Agave plant. Though intensely sweet, it has a lower glycemic index than other natural sweeteners. The result: an amazing agave-based confection that combines the soft silkiness of caramel with dark chocolate and crunchy sea salt. | An Alternative Veggie Meat - Part II | |||
By Emily Buehler, Contributing WriterLast week we high-lighted Quorn, an alternative vegetarian meat product that's made of fermented mycoprotein instead of the omnipresent soy. This week we'd like to introduce Sunshine Burgers—on sale through the month of February in the freezer section! Sunshine Burgers are the brainchild of Carol Debberman, who grew up in America's farm-belt as a "closet vegetarian." Once old enough to cook for herself, she began experimenting with veggie burgers to supplement the woefully lacking vegetarian options available at the time. She read up on nutrition to pacify her mother, who kept telling her she'd die from her vegetarian diet. Today, Carol is the co-owner of Sunshine Burgers, made in a small former-bakery in Ellenville, New York, and distributed to markets nationally. Sunshine Burgers are made of sunflower seeds, a good addition to any diet: sunflower seeds are one of the best whole food sources of Vitamin E, known to reduce the risk of stroke and cardiovascular disease. The burgers are full of protein, fiber, healthy unsaturated fats, minerals and phytonutrients. They are soy-, dairy-, wheat-, and gluten-free. If you're looking for a real "cookout burger" flavor, Sunshine Burgers may not be right for you. The flavor tends to be nutty, or perhaps "rice-y." But if you're looking to diversify your alternative meat options or just want a healthy vehicle for your mustard, grilled onions, or fakin' bacon, Sunshine Burgers are a great treat. |

Opening the year - February is the peak of kidding season. The Saturday and Sunday of the weekend before Valentine's Day 12:00-5:00 PM is our spring open barn. We'll have lots of kids by then, and chances are pretty good that more than one birth will occur that day. No matter what the weather, the action occurs in the barn, and under a roof. Come dressed for the weather. If you're hungry, we'll have food and beverages available in the Inn. |

| Sustainable Food Seminar | |||
Next seminars February 4 and 18The Institute for the Environment at the University of North Carolina at Chapel Hill and the Nicholas School of the Environment at Duke University, in partnership with the student organizations Farmhand (Duke) and FLO Food (UNC-CH), announce a six-part seminar series discussing food systems. The seminars are supported by the Robertson Collaboration Fund, and organized by Dr. Elizabeth Shay (UNC-CH) and Dr. Deborah Rigling Gallagher (Duke). The seminars showcase the theory and practice of sustainable agriculture and food production and supply—key elements for sustainable community development and the rapidly evolving sector of sustainable enterprise. Presentations will be made by leaders in the movement for food systems that are secure, efficient, just, and health-promoting. They will share * The facts about the operations and products of their enterprises * Their motivation for pursuing sustainable models * The barriers they face * Their views on how their industries fit into the local and regional food systems and how they are evolving. Buy local—local powerNC GreenPower Many of us daydream about living "off the grid" and not using the resources associated with electricity production, but few of us are truly able to live without electricity. Thankfully, there's an alternative we can feel good about: the NC GreenPower program. Through this program, consumers can pay extra to buy electricity from "green" energy sources. Weaver Street Market purchases 10 percent of its electricity from green energy sources this way. NC GreenPower is a nonprofit that started back in 2001 to improve North Carolina's environment through voluntary contributions toward renewable energy. The nonprofit seeks to supplement the state's existing power supply with more green energy (electricity from renewable resources like the sun, wind, and organic matter). Consumers can pay $4 to add 100 kilowatt-hours (kWh) of green energy to North Carolina's supply. So if your household uses about 275 kWh each month, by buying 3 blocks, or 300 kWh, of green energy for $12, you've bought enough green energy to cover all your electricity use! And the "purchase" is tax-deductible. What's more, the average person can become an electricity generator with a small solar photovoltaic or wind system, selling green electricity to the power companies with the help of NC GreenPower. Requirements include that the system be small (generating 10 kWh or less) and interconnected with the local electric utility. A look at the map and list of current NC GreenPower generators here reveals many generators right here in Orange and Chatham Counties! Applications for would-be generators are posted online. |
