Healthier Beef - Grass-Fed! continued

Grass-fed beef has much less fat than grain-fed beef, and can lower bad cholesterol levels. The lower fat content also means less calories. On the other hand, grass-fed beef contains more of the good omega-3 fatty acids. Omega-3s are most abundant in seafood and certain nuts and seeds such as flaxseeds and walnuts, but they are also found in grass-fed animal products because they make up a large part of the fat found in grass. When cattle are taken off grass and shipped to a feedlot to be fattened on grain, they rapidly lose their store of omega-3 fatty acids. Switching to grass-fed beef is one way to restore vital Omega-3s to a diet.

Omega-3s are "heart friendly," reducing risks of high blood pressure, irregular heartbeat, and serious heart attacks, and essential for the brain, reducing risk of depression, schizophrenia, attention deficit disorder (hyperactivity), and Alzheimer's disease. Another benefit is they may reduce risk of cancer and help those with cancer respond better to treatment.

In addition, grass-fed beef (and milk) is the richest-known source of a good fat called CLA that is believed to reduce the risk of cancer, and contains as much as five times more CLA than products from animals fed conventional diets. And grass-fed beef is higher in vitamin E, even compared to feedlot cattle given a dose of synthetic vitamin E. Vitamin E is linked with a lower risk of heart disease and cancer and may have anti-aging properties, and many Americans are deficient in it.

Sensational Teriyaki Chicken Breast***

INGREDIENTS:

1/2 cup Teriyaki basting sauce (This Month's Co-op Advantage Special: San-J Teriyaki Cooking Sauce sale: $2.79/10oz reg. $3.69, save 99¢!)

DIRECTIONS:
1. Marinate the chicken in the Teriyaki sauce for several hours.
2. Preheat oven to 350° F (175° C).
3. In a large skillet, heat oil over medium-high heat. Add chicken breasts, and saute 4 to 5 minutes each side, until lightly browned.
4. Place browned chicken breasts in a 9x13 inch baking dish. Mix the remaining Teriyaki sauce with the Ranch dressing and spooned the mixture over the chicken. Sprinkle with cheese, green onions and bacon bits.
5. Bake for 25 to 35 minutes, or until chicken is no longer pink and juices run clear. With all the rain and cold weather, it's hard to think about summer sunshine; but now's the time because Alba Botanica sunscreen is on sale. If your bottle is running low or has expired, you'll need more soon enough; take advantage of the discount and get it now!

Proper use of sunscreen makes a difference in its effectiveness. For example, applying it twenty minutes before going outside gives it time to absorb into the skin and begin protecting. Even water resistant sunscreen will wear off throughout the day. And combo sunscreen/insect repellent may not be a good idea for long sun exposures, because insect repellent should not be reapplied and may lower the 'sun protection factor' (SPF) of the sunscreen.

Alba Botanica's sunscreens come with an SPF from the minimum recommended of 15 to 32. (Bypassing the mysterious mathematics of calculating SPF, I read that an SPF 15 provides protection against 93% of UVB rays, while SPF 30 provides 97% protection. But a lower SPF 2 only provides 50% protection.) There are water resistant varieties as well as lavender or aloe vanilla scented, sensitive skin formula with aloe, and varieties for kids, facial, and sports. Sunscreens are on sale for $6.99. Also look for SPF 18 Sun Lip Balm for $1.79.
Recipe: Strawberry Spinach Salad
INGREDIENTS:
2 bunches spinach, rinsed and torn into bite-size pieces
4 cups sliced strawberries
1/2 cup vegetable oil
1/4 cup white wine vinegar
1/2 cup white sugar
1/4 teaspoon paprika
2 tablespoons sesame seeds
1 tablespoon poppy seeds

DIRECTIONS
1. In a large bowl, toss together the spinach and strawberries.
2. In a medium bowl, whisk together the oil, vinegar, sugar, paprika, sesame seeds, and poppy seeds. Pour over the spinach and strawberries, and toss to coat.

"Bluegrass Heart: A Benefit for Jan Johansson" will be held on the Village Green on Saturday, May 16th from Noon to 5:00 pm. Performers include Jim Watson, Bill Hicks, Joe Newberry, Danny Gotham, Armand Lenchek, Jan Johansson, David DiGiuseppe plus surprise guests.

This event is a benefit to help local bluegrass musician Jan Johansson, a legendary fiddle player, who has racked up extensive medical bills from a chronic heart condition. Jan has been playing bluegrass music since the 70s and has been a part of the local music scene since the mid-1980s. He is a dedicated family man who gives much to the community, especially the local music community, and we are pleased to be able to help him.

The suggested donation for the event is $5.00, and you'll get your money's worth with an afternoon of great music and fun! Bring a picnic, or pick up some lunch at one of our 7 local food establishments, and get ready to kick back and have fun. In the event of rain, the event will be held at 610 Market Street in Southern Village, next to La Vita Dolce Espresso & Gelato Cafe, adjacent to the Village Green.

Weaver Street Market is hosting Animal Awareness and Adoption Days this summer in an effort to help place our area's many, many homeless dogs and cats. On Sunday May 31st you'll be able to visit with dogs and cats looking for their forever homes, get information on low-cost Spay and Neuter programs, and find out what local rescue groups are doing for the animals in our area.

The "2009 Local Farms/Local Art Exhibit"

This spring, Panzanella and Weaver Street Market present the second annual Local Farms/Local Art Exhibit. On display in Panzanella and the Hillsborough Weaver Street Market through June 7, the exhibit features the work of 32 North Carolina artists. Working with watercolor, oil and acrylic painting, photography, fiber art and vegetable papyrus, these remarkable neighbors show their appreciation and support for local farming in a truly beautiful way.

Vote For Art Results: The People's Choice Awards

From Thursday, April 9th through Sunday, April 19th, guests at Panzanella and Weaver Street Market in Hillsborough were invited to cast a ballot for their favorite piece in this year's Local Farms/Local Art Exhibit. Four artists (two in each location) with the most votes won gift cards for use at Weaver Street Market and Panzanella. The top artist in each location also won a Piedmont Farm Tour Button, which allowed them to take a carload of friends on the tour, gathering inspiration for future works of art. The prizes were awarded at the artists' reception, on April 20th, for Carroll Lassiter's oil painting, "Bertie County", Cam Cline's acrylic painting, "Blackbird", Paula Fitzpatrick's acrylic painting, "Dominique", and Dolly Woodell's color photograph, "Momma Left Me Here."
