Blueberries: a treat you can trust! Perhaps you remember the infamous gum-chewing scene from the movie Willy Wonka and the Chocolate Factory, when Violet Beauregard eats an amazing new gum that tastes like a three-course meal. The flavors unfold with incredible complexity, each more intense than the last, until the final course, blueberry pie. Unfortunately, due to a slight defect in the product, Violet turns into a giant blueberry and must be rolled away for juicing, leaving Willy Wonka to mourn, "It happens every time...they all become blueberries." Mexican Baked Cod:INGREDIENTS: • 1 1/2 pounds cod (This week's WSM special: New item! Alaskan wild caught Cod Loins, on sale $6.99/lb, save $3.00/lb!) • 1 cup salsa (This Month's Co-op Advantage Special: Salpica's Salsa, on sale $2.99/16oz, save $1.30/ea!) • 1 cup shredded sharp Cheddar cheese (This Month's WSM Special: Australian Cheddar, on sale $4.25/lb, save $1.74/lb) • 1/2 cup coarsely crushed corn chips (This Month's Co-op Advantage Special: Garden of Eatin's Tortilla Chips $3.49/16oz bag, save $1.10!) • 1 avocado - peeled, pitted and sliced • 1/4 cup sour cream (In-store coupon available for Organic Valley Sour Cream 50¢ OFF 16 oz pkg.) (WSM's special: Bella Famiglia Extra Virgin Olive Oil 1 liter sale: $7.99, reg. price $13.99, save $6.00!) DIRECTIONS: 1. Preheat oven to 400 degrees F (200 degrees C). Lightly grease one 8x12 inch baking dish. 2. Rinse fish fillets under cold water, and pat dry with paper towels. Lay fillets side by side in the prepared baking dish. Pour the salsa over the top, and sprinkle evenly with the shredded cheese. Top with the crushed corn chips. 3. Bake, uncovered, in the preheated oven for 15 minutes, or until fish is opaque and flakes with a fork. Serve topped with sliced avocado and sour cream.. BLUEBERRY PIE:(This week's WSM Seasonal Pick: Local, North Carolina's Blueberries $3.99/1 pint pkg!) INGREDIENTS: • 3 to 4 cups of Blueberries - fresh or frozen (3 cups if you like a thin pie, 4 cups if you like it a little higher!) • 7 Tablespoons corn starch • 3 Tablespoons of grape juice) (This Month's Co-op Advantage Special: R.W. Knudsen Just Concord Grape Juice, on sale $4.79/32oz, save $1.70/ea!) • 2 Tablespoons lemon juice • One 9 inch Famous WSM's pie crust (Weaver Street Market's famous Pie Crust - find it in our freezer: 2 for only $5.99!) Seasonings: • 1 teaspoon Cinnamon • 1/4 teaspoon allspice • One 9 inch deep-dish Pie Plate Sweetener: • 2/3 cup granulated Sugar Crumb topping: • 1/4 cup sugar (OR 1/8 cup sugar and 1/8 cup Splenda) • 1/2 cup flour • 1/4 cup butter or margarine (This Month's WSM Special: European Style Butter, on sale $2.49/16oz, save 80¢!) DIRECTIONS: 1. Preheat the oven to 375F. 2. Wash the blueberries (don't soak) 3. Pick out and remove any bits of stems 4. Mix the dry filling ingredients (2/3 cup of sugar, 7 Tablespoons of corn starch, 1 teaspoon of cinnamon and/or 1/4 teaspoon of allspice.) 5. Mix in 2 Tablespoons of lemon juice, 3 Tablespoons of water (or grape juice) and stir it up. 6. Add the blueberries to the pie crust. Just pour them in! There's lots of air space and it will cook down, so don't worry if they mound up about an inch above the edge of the plate. 7. Pour the mixture of sugar, juice, etc. into the pie all over the blueberries. If it is a gloppy liquid, don't worry, just pour it somewhat evenly over the top. It will smooth itself out in the oven. 8. If you'd like the crumb topping, just mix the following ingredients in a small bowl and sprinkle it over the pie. - 1/4 cup sugar (OR 1/8 cup sugar and 1/8 cup Splenda) - 1/2 cup flour - 1/4 butter or margarine 9. Put the pie in the oven. 10. Cook the pie at 375 F (or 190 Celsius) for 1 hour. 11. Remove when the pie is golden and is bubbling. If it is not, check every 3 or 4 minutes until it is. 12. Set the pie on a rack to cool. Serve warm with ice cream. |

Sunday, July 5, 11 am - 1 pmon the lawn in Carrboro Every first Sunday of the month, now through October, from 11 am - 1 pm, Weaver Street Market will host nonprofit groups from our community. Local, non-profit groups will have informational tables where you can find out about the good works of our local charitable groups. Come prepared to learn, to donate, and maybe find a group you'd like to volunteer with! If your organization would like to attend: Space is limited and assigned on a first come basis so we ask that you sign up at least a week in advance and limit the number of times you sign up to three (3) per year. | From Discounts to Dividends |
Weaver Street Market will change the way it rewards consumer owners starting at the end of June, replacing the owner and senior discounts at the register with a Patronage Dividend.
"Changing from discounts to dividends, along with other changes that our staff is making, will put us back in the black," said Board Chair Dave Rizzo. Like many businesses, Weaver Street Market is going through a difficult financial time. Sales are down 12% in Carrboro and Southern Village, and the co-op is losing $65,000 a month. The change will save $60,000 per month. Patronage dividends are more sustainable than discounts because the co-op returns profits to owners at the end of the year after we have made them. "Weaver Street Market is fortunate to have such loyal co-op owners who support our mission," said Rizzo. "This change ensures that our co-op will continue to provide what we value: local food, vibrant community, and a strong local economy." On Hog Day stop by the Orange County Economic Development Booth to sample local pork and speak personally with WSM's Paul Griswold about our local meat program and meet the Parker Family, one of WSM's local pork producers.Weaver Street Market's Local Meat Program: Weaver Street Market is committed to offering fresh and nutritious meat that is sustainably produced from local North Carolina farms. Sustainable in this context means not only grown on local farms using ecologically-sound farming practices, it also means getting the meat from the farmers' fields to your table in an economically viable way. For local meat to become the primary meat that we sell, farmers need to be paid a high enough price to make a good living and consumers need a consistent selection of fresh product at an affordable price. Our new local meat initiative is a partnership effort with NC Choices, a project of the non-profit Center for Environmental Farming Systems, that is working with us to develop and manage a network of farmers and processors to provide a steady, year-round supply and FoodLogiQ, a Durham-based company specializing in on-demand food safety and food systems software, which provides needed expertise in meat processing, packaging and traceability systems. Sustainable meat production is a vital link to a more sustainable food system, one that allows you to truly eat well. |

| Cooperative Community Fund | |||
We've planted a seed and it's growing steadily! Now in it's fourth year, the Cooperative Community Fund is a sustainable fund for community donations and is part of a national campaign called, 'Give where you live.' Sponsored by the Twin Pines Cooperative Foundation, the fund serves as a means for co-op members and shoppers to make donations to an endowment that donates to local non-profit organizations. Twin Pines Cooperative Foundation directly invests the money raised by individual co-ops across the country in socially responsible funds such as credit unions, locally owned community banks that support cooperatives, the Northcountry Cooperative Development Fund, and the National Cooperative Bank. This year the fund generated $1500 in interest for Weaver Street Market to disperse to local groups while leaving the principle to grow next year's community seed! Small Grant Opportunity for Local Non-Profits Local groups working on issues relating to: 1) sustainable agriculture and organic food, 2) hunger and malnutrition, 3) environmental protection, or 4) cooperatives are eligible to apply for a grant from Weaver Street Market's Cooperative Community Fund. Eligible organizations must be certified non-profit and be working in Orange, Chatham, or Alamance Counties, NC. Recipients will be chosen by a volunteer committee of worker- and consumer-owners of Weaver Street Market, and will be featured in Weaver Street Market's Annual Report in early October. |

Volunteer July 3-5 at the Trash-free Festival for the Enoby Emily buehler, contributing Writer The Festival for the Eno, now in its 30th year of raising money for and awareness of the Eno River, is a shining example of a trash-free event. Most of the Festival's waste comes from food and beverage vending; festival organizers and vendors work together to reduce excess packaging and other waste, and to ensure that food service items such as plates and cups are recyclable or compostable wherever possible. The Festival provides all food vendors with compostable cutlery made from wheat, and recycles all used vegetable oil through Piedmont Biofuels. Instead of traditional garbage cans, the Festival provides a number of recycling stations throughout the grounds, most of which are monitored by volunteers to ensure that materials are properly placed. Recycling-related volunteer shifts are three hours long and include checking recycling stations, sorting recyclables, and manning the compost pile.
