Peregrine Farm Dinner at Panzanella

Peregrine Farm began 28 years ago as a pick your own berry farm, but quickly evolved into a vegetable farm when Betsy began working full time on the farm in 1983. The flower aspect of the farm began in 1987 with "about 100 feet of zinnias and about 25 globe amaranth." After running a painting business full time for 7 years, Alex came onto the farm full time in 1990. "It became apparent that we needed division of labor," says Betsy, and she began to really focus on cut flower production as Alex took over most the vegetable production. more

The Hitts have been instrumental in creating a flourishing local agricultural economy through the Carrboro Farmers' Market, serving on the board of the Farmers' Market as well as the board of Weaver Street Market. They also attend Slow Food events and the Terra Madre summit in Italy where they look for new ideas in food production as well as forging networks with artisan farmers around the world.

Alex and Betsy are famous for their blueberries in June, their tomatoes in July and their peppers in August. For this very special farm dinner Panzanella, Chef Jim Nixon is using fresh tomatoes and peppers from Alex & Betsy to create the following menu:

Pasta, Broccoli and Chicken:

INGREDIENTS:
12 oz pasta of your choice (we recommend rigatoni or bow tie pasta) (WSM's Every Day Low Price: Bionaturae Pastas (Five Varieties), $2.25/16oz)
1/2 lb fresh broccoli florets (This week's WSM's special: Organic broccoli, 2.00/lb, save 99¢/lb, product of California)
~ 1/4 cup olive oil (July Co-op Advantage Special: Zoe's Organic Extra Virgin Olive Oil, on sale: $9.99/25.5oz, save $2.50!)
1 Tbsp minced garlic
4 Tbsp Pesto
1 3/4 cups of chopped tomatoes (This week's Seasonal Pick: Organic Roma Tomatoes from The Vollmer Farm, Bunn, NC, $2.99/lb)
3/4 cup grated Parmesan cheese
1 lb boneless Chicken Breast halves, cooked and chopped (This week's Owner's special: Freebird all natural boneless Chicken Breast, $4.99/lb, save $2.00/lb)
salt to taste
ground black pepper to taste

DIRECTIONS:
1. In a large pot with boiling salted water cook the pasta until al dente. Drain.
2. Meanwhile, blanch broccoli florets in a medium size saucepan, remove with slotted spoon. In same pan sauté the minced garlic and pesto sauce in the olive oil for 2 minutes. Add the chopped tomatoes and set aside.
3. In a large bowl, toss cooked pasta with blanched broccoli, cooked chicken, and garlic/tomato mixture. Add grated Parmesan cheese, salt, and ground black pepper and mix well. Serve warm. Great served with crusty bread or a tossed salad.

Morningstar Farms Riblets on Sale!

You may remember an episode of The Simpsons in which Homer falls for the "Ribwich." It's a new barbeque sandwich available at Krusty Burger, and once Homer's addicted, the Ribwich disappears. It turns out the Ribwich was a limited time offer being test marketed in Springfield; Homer follows the Ribwich as it's tested across America, until to his horror, it's discontinued when the "unidentified animal" from which it's made goes extinct.

I felt much like Homer when Gardenburger discontinued their vegetarian "Riblets": soy formed into ribs and smothered with barbeque sauce. Fortunately, Steve (the Grocery Manager in our Hillsborough store) tipped me off, and I stocked my freezer with the last of his supply. The boxes have decreased over the past few months, until just last month when I made the decision to eat my last one.

And then just in time, Steve, eyes twinkling, saw me in the store and said, "Your ribs are back!" It turned out, the new vegetarian ribs are from a different company, but Steve agreed to order some and they're just as good as I remember. And they're on sale this month! Look for the Morningstar Farms Riblets in the freezer case in our Hillsborough store only, for $3.49.

If fake meat shaped like ribs is not your thing, mix some barbeque sauce and cook it up on your vehicle of choice: ribs, hamburgers, tofu cubes, or chicken wings! Here's my mom's recipe, which is about as simple as they come:

Mix equal parts molasses, ketchup, and mustard. She does 1/3 cup of each for one family dinner. (Note she uses "Grandma's Molasses" that has some sugar left in it. If you use Blackstrap Molasses, add a little sugar to the sauce to make up the difference.) Then slap it on whatever's cooking on your grill and enjoy! Boneless Sirloin Pork Chops are on sale this week, $4.99/lb, save $1.00/lb! They make great boneless ribs.

Owner Loans are an opportunity to invest in your local food co-op!

Weaver Street Market offers co-op owners an opportunity to invest their money locally through our Owner Loan Program. By loaning money to Weaver Street Market, your investment stays with a business you know and trust, and enhances the economic sustainability in our region, supports local farmers, and builds our local community.

What is the owner loan program?
The owner loan program is an opportunity for Weaver Street Market owners to further support the co-op by loaning money. Food cooperatives routinely use owner loans to provide additional owner capital to open a new store or strengthen the co-op's operations.

What are the goals of Weaver Street Market's Owner Loan Program?
We have set an owner loan goal of $500,000 for 2009-2010. The funds raised will be used to retire existing loans and other debt. To reach this goal, we are seeking 50 owners who can make loans of $10,000 or more.

What are the terms of the Loan Program?
1. The Owner Loan Program is open to all Weaver Street Market owners who are North Carolina residents.
2. The interest rate is 6%. Interest is paid annually on the anniversary of the loan.
3. The minimum loan amount is $10,000.
4. The term is five years.

Are there risks associated with this program?
Owner lenders face the risk inherent in lending funds to any business endeavor. Owner loans are unsecured and are subordinated to our bank loans. Potential lenders should carefully read the Offering Memorandum.

Contributing to our future
Owner lenders play a vital role in the security and growth of our co-op. Owner loans enabled Weaver Street Market to open 21 year ago, and have supported our growth ever since. Your loan will strengthen the co-op's capacity to support our local growers, food producers, and the local economy while providing secure jobs in a thriving local business.

Cooperative Community Fund
We've planted a seed and it's growing steadily! Now in it's fourth year, the Cooperative Community Fund is a sustainable fund for community donations and is part of a national campaign called, 'Give where you live.' Sponsored by the Twin Pines Cooperative Foundation, the fund serves as a means for co-op members and shoppers to make donations to an endowment that donates to local non-profit organizations.

Twin Pines Cooperative Foundation directly invests the money raised by individual co-ops across the country in socially responsible funds such as credit unions, locally owned community banks that support cooperatives, the Northcountry Cooperative Development Fund, and the National Cooperative Bank.

This year the fund generated $1500 in interest for Weaver Street Market to disperse to local groups while leaving the principle to grow next year's community seed!

Small Grant Opportunity for Local Non-Profits

Local groups working on issues relating to: 1) sustainable agriculture and organic food, 2) hunger and malnutrition, 3) environmental protection, or 4) cooperatives are eligible to apply for a grant from Weaver Street Market's Cooperative Community Fund. Eligible organizations must be certified non-profit and be working in Orange, Chatham, or Alamance Counties, NC. Recipients will be chosen by a volunteer committee of worker- and consumer-owners of Weaver Street Market, and will be featured in Weaver Street Market's Annual Report in early October.

Volunteer Opportunity for Weaver Street Market Owners

Weaver Street Market is looking for a small group of committed volunteers to meet a few times this September to select the recipients of this year's Cooperative Community Fund grants. In order to volunteer, one must be: an owner of the co-op in good standing, able to work as part of a consensus-building team, able to attend all meetings, and not be affiliated with a non-profit applying for a grant.

The meetings will be held at the Carrboro WSM from 6:30 - 8:00 pm on Tuesdays, September 1 and 8, with dinner provided in exchange for volunteer time. Committee members are also requested to attend the Annual Meeting on October 25. Every first Sunday of the month, now through October, from 11 am - 1 pm, Weaver Street Market will host nonprofit groups from our community. Local, non-profit groups will have informational tables where you can find out about the good works of our local charitable groups. Come prepared to learn, to donate, and maybe find a group you'd like to volunteer with!

If your organization would like to attend: Space is limited and assigned on a first come basis so we ask that you sign up at least a week in advance and limit the number of times you sign up to three (3) per year. Also, your group must be a 501(c)(3). To apply, please email Jason Baker or call 919-241-1794. Your request will be confirmed by email or phone. Come out and let everyone know what your group is doing in the community!

Iced Tea the Green Way

My favorite tea, Choice Organic Tea, is on sale this month, and I want an excuse to buy some. In addition to being organic, these teas are fair trade certified and come in a box made of recycled materials. The tea bags are made of natural fibers, and the company uses green power! Choice Organic Tea comes in the standard varieties (Earl Grey, Black, English Breakfast, Green) as well as Peppermint Herb, Green Tea with Peach, and Oolong.

Of course tea in July is not exactly appealing, so I decided to make a bottle of iced tea to use up the bags in my cupboard. Not wanting to heat up the kitchen, I tried 'Sun Tea': fill a glass bottle with a half-gallon of water and suspend four tea bags into it. Place in a sunny window for several hours and the water will become tea! (I made mine at lunchtime and it was ready for dinner.)

If you like your tea sweet, it can still be Fair Trade: Wholesome Sweeteners's Fair Trade Organic Sugar from Paraguay and Natural Cane Sugar from the African country Malawi are also on sale this month! Also look for Raw Cane Sugar from Malawi in our Hillsborough store.
