New! WSM Weekly Owner Specials see these great deals here. Freezing Food for Winter or For Anytime! This time of year, our ancestors would be putting up food for the winter - pickling, canning, smoking, and drying. While many still practice these methods (and if you do, WSM has small canning jars for sale!), to some of us they sound more like quaint demonstrations at historic sites than anything we'd spend a Saturday doing. For those who don't want to spend the time preserving, using a freezer to put away some of summer's bounty is an easy alternative. More |

| Frozen Food continued | |||
Special plastic 'freezer containers' or freezer storage bags can be filled with fruits and vegetables. View an in-depth discussion of freezing fruits and vegetables here. Almost everything can be frozen somehow, even hot peppers, raw or roasted! (Don't have any hot peppers? Visit Peregrine Farm at the Carrboro Farmers' Market and Alex Hitt will roast some up for you in his rotating cage o' fire. Don't like hot peppers? We hear Alex has a variety that has all the sweet flavor of a habañero without the heat!) Freezers can do much more than save the tastes of summer. They can add convenience to our lives. For example: I love rice but don't have time to cook it. If I try to cook rice on a busy weeknight, it inevitably turns out crunchy because I'm rushing. So instead, I make a whole pot of rice, giving it plenty of time to fluff up. Then I freeze it in single serving sizes. Now when I want rice with dinner, I pull out a container and drop the block of rice into a saucepan with a little water. After only a few minutes of steaming (and a few hacks and pries with a tough fork), dinner is served. Do you have trouble getting through a loaf of bread while it's still fresh? I buy it sliced and freeze it—then I can easily toast slices straight from the freezer. Most pastries freeze well in the short term; this week, stock up on the Owner Special scones and stash them away for the rest of the month. And take advantage of periodic cheese specials by freezing grated cheese. Freezing cheese changes its texture, but you won't notice if you grate it first and use it melted over beans or an omelet. It's easy to sprinkle out as much as you want, and while frozen cheese blocks take awhile to defrost, frozen grated cheese melts in an instant. Freezers can also save money if you shop the sales. This week, stock up on Immaculate Baking Company's cookie dough, another Owner Special. You'll have easy cookies for the rest of autumn! And check the freezer aisle for September CAP specials, including Gardenburgers and Sunshine Burgers, Rising Moon pizzas and ravioli, appetizers from potstickers to samosas, and my favorite, Quorn 'chicken' nuggets! Recipe: Mrs. Buehler's Zucchini Soup—it freezes great! My mom used to bring this soup to the beach with us—that's right, the beach! We had swimming lessons at 9 AM, and after an hour in Long Island Sound, she'd warm us up with cups of hot zucchini soup out of her thermos. I like to make it in big batches and freeze it, and now is the season when zucchinis are running rampant so get the soup pot out and start slicing. 2 lbs zucchini, unpeeled and sliced 1/4 cup butter 1 medium onion, chopped 24 oz broth (about 2 3/4 cups) 1/8 tsp salt 1/8 tsp pepper 1/4 tsp nutmeg 1/2 cup milk or half & half Melt the butter in a large pan and sauté the zucchini and onion until they are limp. Add the broth and spices, cover, and simmer 15 minutes. Add the milk and remove from heat. Put in blender and process until puréed (only a few seconds). Serve hot or cold, or freeze! |

Eat Chocolate to Help the Environmentby Emily Buehler, Contributing Writer Want a great way to do some good in the world? Eat chocolate! That's right—Endangered Species Chocolate. Every time you buy a bar, Endangered Species Chocolate LLC donates 10% of the profits to "help support species, habitat, and humanity." They form two-year-long partnerships with nonprofits selected for the nonprofit's aggressive and clear mission to do just this. They also pay their employees to do community service in their neighborhood, and they buy chocolate that is ethically grown and harvested. Each wrapper features an endangered animal, with information and 'Compassionate Actions' to help that species listed inside. (There's also a code you can enter online to win prizes, information about an essay contest, and a 'conservation tip' such as 'Tackle Phantom Energy' by unplugging electronic devices, which draw power even when they're off!) Choose from the extreme dark chocolate Panther to the cacao nib-filled Bat to the milk-chocolate-with-almonds Sandhill Crane. Plan ahead: the bars make great holiday stocking stuffers for kids. You can even buy sets of wedding favor bars from their website. Endangered Species Chocolate Bars are on sale through September for $1.99 each. |
