Traditional country cooking from Mama Dip's! Mildred Edna Cotton Council (aka Mama Dip) was born in Chatham County, North Carolina, to Ed Cotton and Effie Edwards Cotton. She was raised in Balwin Township where she started cooking at an early age. Mildred was the youngest of seven, and was dubbed 'Dip' by her siblings because she was so tall and had such long arms that she could reach way down in the rain barrel to scoop up a big dipper full of water when the level was low. Mama Dip first learned to cook watching family members make meals by using the 'dump cooking' method. Dump cooking means no recipes, just measure by eye, feel, taste, and testing. Fresh local pitas! Mediterranean Deli & Catering has been a Chapel Hill institution for nearly two decades, delighting diners with the authentic flavors of the Middle East. Since opening in 1992, owner Jamil Kadouras has expanded the restaurant four times. The most recent expansion allowed him to realize a long-time dream—adding a bakery. This fall, using equipment shipped from Israel, Kadouras and his staff began to make fresh pitas using locally milled flours from Lindley Mills.

"I've always wanted to do this," Kadouras says. He stresses that despite the specially-ordered oven and mixer, the process is still very small scale and hands-on. "The machinery is not automatic. We do it by hand." The white and whole wheat pitas are baked fresh using certified organic and Kosher flour from Lindley Mills in Graham, NC, a family-owned mill that dates back more than a century.

Of the new pita project, Kadouras says, "It's been wonderful," and our tastebuds agree. Fluffy, chewy, yeasty and delicious, these pocket breads are the perfect vehicle for your favorite dips, spreads, sandwiches and stuffings. Fast, Easy, and Delicious: Home-Baked Cookies!

Years ago I had a roommate whose parents hadn't baked. While my shelf in the kitchen had flour bags and baking soda tins, hers held plastic-wrapped packages of cookies. To her, 'homemade cookies' meant the kind you bake at home—after buying the dough from the grocery store.

I used to scoff, but not anymore. This fall, after admitting I was too busy to bake cookies for an event, I broke down and bought the pre-made dough from Immaculate Baking Company. The dough came cut into round pieces; breaking them apart to place on cookie sheets took all of two minutes. They baked into 24 perfect chocolate chip cookies, which were a huge hit. On top of that, the 'test cookie' I'd saved at home remained chewy for days! The cookies were well-worth $3.69, especially when I considered how much time they had saved me.

Hanukkah Coins
Chocolate coins wrapped in foil are the modern incarnation of the traditional gift known as Hanukkah gelt. 'Gelt' is a Yiddish term for money. The roots of gelt-giving go back much further than the Middle Ages, the era in which the custom is usually said to have originated. Records show that in 142 B.C.E., when Judea gained its independence, Syria's king declared to Jewish leaders, "I turn over to you the right to make your own stamp for coinage for your country." The ability to mint their own coins was a concrete expression of the newly-won independence of the Jewish people. Weaver Street Market is seeking one volunteer to help out with our home delivery program starting in January. Every Wednesday morning, a dedicated team of volunteers shop for and deliver groceries to homebound consumer-owners within an eight mile radius of our Carrboro store. Potential volunteers must have reliable transportation and regular availability on Wednesday mornings, starting at 9am. Spend your money locally this holiday season and help keep our local economy going strong!

The Town of Carrboro has declared December 5-12, 2009 "Buy Carrboro Week." A local living economy ensures that economic power resides locally, focusing on community with long-term economic viability. Several studies have shown that money spent at a locally owned business stays in the local economy and continues to strengthen the economic base of the community. A 2002 case study in Austin, Texas showed that for every $100 in consumer spending at a national bookstore in Austin, Texas the local economic impact was only $13. The same amount spent at locally based bookstores yielded $45, or more than three times the local economic impact.

There are other benefits to buying local as well. Research has shown that small local businesses make indispensable contributions to communities and neighborhoods. A study of businesses in Oregon, detailing charitable giving showed that when in-kind contributions were included, "small firms gave an average of $789 per employee, medium sized firms $172, and large firms $334." Additionally, large firms contribute primarily to the area where the corporation is headquartered, not necessarily where they do business.

'Visceral Depths'
new works by Jacques Menache

Jacques Menache was born in Paris, France and came to Carrboro in 1969. He finished college at NC Central University in Durham, and graduated with a Master's in Fine Arts from UNC Chapel Hill in 1973. In 1974, after a year as an instructor at UNC, Jacques founded The ArtsCenter in downtown Carrboro and served as the Executive Director until 1988.

A retrospective of Jacques' artwork was first shown at his restaurant, El Chilango, in 2000. A second retrospective was exhibited at Panzanella in 2006.

The title of this show, 'Visceral Depths' comes from Jacques' long time interest in surgery, biology, and electron photo-microscopy. This new work combines various materials and techniques such as acrylic, encaustic, collage, assemblage and drawing.
