WSM Famous Stollen
The Story of Stollen

The tradition of Christmas Stollen dates back to 14th century Germany. The earliest sweeteners in this period were honey and dried fruits rather than sugar. Until the 17th century sugar was an immensely scarce and precious commodity that trickled in from the Near East. Consequently, sweetness meant festivity and joy to the Europeans of old. The fruit bread "Stollen" was the most popular of the early breads in Germany and was made only at Christmas, the time of greatest rejoicing.

Originally the confection was made without milk or butter because these items were forbidden in the Catholic Church. That changed in 1450 when Pope Nicholas V signed the "Butter Document", allowing bakers to use butter. It was much later when the use of milk was finally permitted.

In the years that followed, Stollen was sometimes given as payment to feudal lords and a single loaf could weigh as much as 36 pounds. Often shaped into a cross, Stollen became part of the other various religious celebrations.

Stollen continues to be a holiday favorite. The most famous is the patented Dresden Stollen that features candied fruits, raisins, and currants. However, like Grandma's family fruitcake, Stollen recipes vary, each one containing a secret ingredient or a special technique that makes it unique.

Stollen is available now at all Weaver Street Market locations. This will be the fifteenth year for the famous Weaver Street Stollen, as always, it will be studded with golden raisins, apricots, dried cherries and currants, marinated overnight in sherry. This bread will stay fresh for several weeks - if you can keep it around that long! $7.95 includes a $1.00 Hope for the Holidays Donation!
New! Locally-made Soup
Delicious Homemade Soups
Epiri Foods, Southern Pines, NC

Dorjan Arsi and Gent Kumi were both born in Tirana, Albania, the culinary crossroads between Italy and Turkey. When they moved to this country a dozen years ago, they brought a wealth of knowledge about Mediterranean cooking learned not from culinary schools, but from their parents and grandparents.

For the past eight years, Dorjan has been working alongside his father at Corfu Taverna, a restaurant in Southern Pines, North Carolina. They soon gained a reputation for authentic Albanian flavors like lemon chicken soup, artichoke hummus and creamy tzatziki. "People would bring their empty jars to the restaurant and ask us to fill them up," Dorjan remembers.

Demand for their signature soups, dips, and spreads grew so much that Dorjan called up his cousin Gent, who was living in Seattle at the time, and invited him to move to North Carolina to start a business selling fresh foods based on the recipes of their youth. Together they founded Epiri Foods, named after a mountainous region in Southern Albania, near the island of Corfu.

"We cook like we did back home. We use simple recipes, with perishable ingredients. No preservatives, no colorings, just beans, rice, olive oil and fresh vegetables," says Gent.

A steaming bowl of one of their all-natural soups is the perfect antidote for a cold winter's day. Choose from white bean, lemon chicken, or tomato basil, pair it with handmade pita and tzatziki sauce, and you have a fresh, flavorful meal that combines the best of Mediterranean cuisine with 100% locally-produced foods. Look for Epiri Foods locally-made soups in the Grab 'n' Go case at all WSM locations.

Homemade Gift Ideas
Looking for a homemade gift that is light on the wallet but sure to be appreciated?
by Jason Baker, Contributing Writer

Package some Friendship Soup, a medley of your favorite dry soup ingredients layered in a container. It's a great way to reuse those empty mason jars when there's nothing ready to be canned. Or, repurpose an empty honey, tomato sauce, or salsa jar.

For a quart-sized jar, you'll want about a half cup of Barley ($1.59/lb), half cup of Yellow ($1.79/lb) or Green ($1.85/lb) Split Peas, half a cup of your favorite rice, and a half a cup of Green ($1.69/lb) or French ($1.79/lb) Lentils. For color and variety, you can add Adzuki Beans or Black-Eyed Peas, but stick to small beans or the soup will take too long to cook. Then, head over to the loose spices and pick up some of your favorites: parsley works well, and I usually add a bay leaf or two per jar, but otherwise use your best judgment and be creative! Don't forget to add a teaspoon or two of salt and a dash of pepper. Fill up the remainder of the jar with a pasta of your choice and seal it up. Wrap the whole thing in a decorative ribbon, and include a personal note with instructions for your recipient. (Tell them to add contents of jar to about three quarts of water, and optionally add fresh-chopped carrots, celery, cabbage, or their favorite seasonal vegetable and let it simmer for at least an hour or until everything is tender.)

Or make a homemade pomander ball. Just grab a medium-sized orange or other citrus fruit of your choosing, along with some loose cloves ($1.25/oz). Poke some holes, insert the cloves, and let it dry out for the rest of the week. Depending on the size of the fruit and how densely you decorate, it takes between one and two ounces per fruit. Decorate with a bow and tie a string to hang it from. Pomander balls look and smell great for years!
Cold Days - Hot Tea!
This time of year, there's nothing like wrapping your cold fingers around a hot mug of tea. Our tea selection features everything from old favorites and simple brews (like Celestial Seasonings Sleepytime), to herbal medicines and powerful health-boosters (like Republic of Tea Goji Raspberry superfruit green tea).

On sale in December are the Celestial Seasonings holiday teas, available only during this festive time of year. Stock up on Nutcracker Sweet, decaffeinated green Candy Cane Lane, Gingerbread Spice, Sugar Plum Spice, and Sugar Cookie Sleigh Ride; they'll be gone before you know it! Also look for Tazo teas on sale this month; who couldn't use a little more 'Calm' or 'Awake' this hectic holiday season? And if the cold wet days and extra-long dark nights have you sniffling or coughing, stop at the Traditional Medicinals boxes for some cold-fighting Echinacea, Breathe Easy, or Throat Coat tea.

Want to give your body a boost of antioxidant aid? Check out the Republic of Tea green teas and superfruit green teas, in colorful cans of 50 bags. Their Double Green Matcha Tea contains a fine powder that drifts out of the teabag and into your cup; drink it down and reap the additional antioxidant benefits.

Why Give Coal When There's Dental Floss?
by Emily Buehler, Contributing Writer

My sister and I began every Christmas morning by emptying our stockings. At the top there'd be lightweight little packages—goofy items Mom had found, or useful things like fancy pencils. But down at the bottom, the stocking would sag with weight. We never got coal, though; instead she wrapped up smooth stones from the beach, after writing on them in magic marker. We'd unwrap the rocks to read things like "tantrums" or "doesn't eat her peas" while Mom grinned at us across the living room.

Rocks are great, but there are alternatives. Do you know a rotten kid, or even a rotten grownup, whom Santa should surely pass over this holiday season? Why not torture him or her and help the environment at the same time—with dental floss. Eco Dent's Gentle Floss is dental floss that comes in a recyclable cardboard box. With 100 yards in a box, it lasts for months, and when it does run out there's no plastic floss box to toss in the trash. And it's the perfect stocking stuffer size!

Eco Dent Gentle Floss is available for $4.99 in our Carrboro and Hillsborough locations.

'Visceral Depths'
new works by Jacques Menache
Now - February 8, 2010

Jacques Menache was born in Paris, France and came to Carrboro in 1969. He finished college at NC Central University in Durham, and graduated with a Master's in Fine Arts from UNC Chapel Hill in 1973. In 1974, after a year as an instructor at UNC, Jacques founded The ArtsCenter in downtown Carrboro and served as the Executive Director until 1988.

A retrospective of Jacques' artwork was first shown at his restaurant, El Chilango, in 2000. A second retrospective was exhibited at Panzanella in 2006.

The title of this show, 'Visceral Depths' comes from Jacques' long time interest in surgery, biology, and electron photo-microscopy. This new work combines various materials and techniques such as acrylic, encaustic, collage, assemblage and drawing.
