Salads Make a Meal

Keep the oven off and save time, too! Serving a salad plate for supper in the summertime keeps the house cool, and most salads are quickly assembled without needing to simmer, bake or stew for hours. And, if you buy locally-made Grab 'n Go salads, there's no preparation at all—just open and serve!

Don't think you can make a meal of salads? Here are some suggestions:

The Middle Eastern Spread:
Grab a container each of Weaver Street Market Tabouli and Hummus. (DIY-ers, Fantastic Foods box-mix tabouli and hummus are on sale in July). Add a pack of pitas made by the Mediterranean Deli on Franklin Street and a container of Epiri Foods sour cream-cucumber Tzatziki dip. (For a lighter tzatziki, make-your-own with plain yogurt, diced cucumber, minced garlic, salt, and pepper; it's better if you make it the day before and the garlic has time to 'mellow.') Finish up with Divina stuffed grape leaves (on sale this month).

The "Aren't We Sophisticated?":
Fill a serving bowl with chewy, cheesy Tortellini Pasta Salad from the Grab 'n Go case. In side bowls, serve your favorite olives from the specialty case, and feta cheese, cut into cubes. Eat everything with toothpicks, even the tortellini!

The School Lunch:
Start with one of our classic salads: Traditional Tuna Salad, Mom's Chicken Salad (or the deceptive Un-Chicken Salad), Classic Egg Salad, or Mom's Potato Salad. For the side, slice a ripe local vine-ripened tomato into wedges, and sprinkle with salt. Slice a local, organic cucumber into long wedges, serve with salt and lime juice. Then open a box of hearty crackers—I like Milton's Multi-Grain Baked Crackers—and start snacking.

The Franco-Andalusian:
There's nothing like cool Gazpacho at the end of a hot day! Weaver Street Market Gazpacho is sold in the Grab 'n Go case—just open and serve! Add a French baguette; rip off bite-sized pieces and scoop them through softened butter.

The Salad Plate:
Create a combo of your favorite Weaver Street salads! Remember to include some protein (Mediterranean Lentils, Red Curry Tofu), some carbs (Savory Wheatberry Salad, Moroccan Couscous Salad, Penne with Broccoli and Cashews), and some vegetables (Homey Almond Beets with Feta, Errol's Carrot Salad, or one of our cabbage-ful Slaws). Serve them on a bed of lettuce.

Pour a tall glass of iced tea and dinner is served.

After Hours
Weaver Street Market's signature event, After Hours, returns to the Carrboro lawn for another summer season of hot, local music every Thursday night from 6:00 to 8:00 pm. Bring a blanket or chair to relax under the live oaks. Hot bar, salad bar, and picnic fare are available for purchase inside. The music is free!

Cooperative Community Fund
We've planted a seed and it's growing steadily! Now in its fifth year, the Cooperative Community Fund is a sustainable fund for community donations and is part of a national campaign called, 'Give where you live.' Sponsored by the Twin Pines Cooperative Foundation, the fund serves as a means for co-op members and shoppers to make donations to an endowment that donates to local nonprofit organizations.

Twin Pines Cooperative Foundation directly invests the money raised by individual co-ops across the country in socially responsible funds such as credit unions, locally owned community banks that support cooperatives, the Northcountry Cooperative Development Fund, and the National Cooperative Bank.

This year the fund generated $1500 in interest for Weaver Street Market to disperse to local groups while leaving the principle to grow next year's community seed!

Small Grant Opportunity for Local Nonprofits
Local groups working on issues relating to: 1) sustainable agriculture and organic food, 2) hunger and malnutrition, 3) environmental protection, or 4) cooperatives are eligible to apply for a grant from Weaver Street Market's Cooperative Community Fund. Eligible organizations must be certified nonprofit and be working in Orange, Chatham, or Alamance Counties, NC. Recipients will be chosen by a volunteer committee of worker- and consumer-owners of Weaver Street Market, and will be featured in Weaver Street Market's Annual Report in early October. Vacation Recycling and Mulch Update

Leaving town? You don't have to leave your love of recycling behind! Your vacation rental may have recycling on site—ask the rental agent. If not, you can find recycling almost anywhere you're headed in North Carolina this summer. Click here for a map of the state. Click on the county and then town where you're headed, and contact information for recycling will pop up! From Snow Hill to Hemby Bridge, you can keep your vacation trash-free.

Mulch Update!
Regular Yard Waste Mulch will NOT be available at the Orange County Landfill starting July 5 through approximately September 1


Orange County expects to be out of yard waste mulch after July 4 through the end of August due to the combination of recent maintenance down time on their grinder and a high level of demand for mulch. They expect to start chipping yard waste again beginning early July however they need to let the fresh chips cure for at least 45 days to achieve the high quality product that they sell. During the remainder of the summer, they will still accept yard waste at the landfill and at four of the staffed solid waste convenience centers and will continue to sell red mulch and compost at $28 per cubic yard. Many thanks to all of their customers who purchase and use yard waste mulch and make it such a popular product. They apologize for any inconvenience this temporary situation causes.

"Layers"

Capturing scenes of daily life, Cat Moleski's lush colors, and impressionistic style transform these moments into dream-like vignettes. Images both real and surreal take on new meaning as layer upon layer of paint and color coalesce, contrast, and enliven the scenes. Some figures are true to form, some are distorted but all are representative of the constant conflict between perception and reality.

Cat Moleski has been painting in oils for over twenty years. She received her BFA from Alfred University in upstate New York. She has spent two residencies at the Vermont Studio Center. You may view more of her work at her website.
