Pumpkins are upon us!  (continued)
... for either heaven or hell and so was sentenced to roam the earth with a burning coal to light his way (Jack of the lantern). Whatever its beginning, the jack-o-lantern has been delighting children and adults in this country for decades and George is the man to see about a pumpkin.

George planted 2 1/2 acres of pumpkins in stages so he'll have pumpkins all month long at the Southern Village Farmers' Market. He expects that the average size of his pumpkins will be 15 lbs. Choose a pumpkin with no bug holes and wash it with peroxide and Clorox to keep it looking good in your displays, or until you're ready to carve it.

George planted his first vegetable garden at the age of seven when he begged for a plot in his father's flower garden. "My granddaddy was a tenant farmer, and it's in my blood," he says. The variety of plants that he grows is astounding, from 26 different kinds of tomatoes to the cocktail variety of Begonias called Whiskey, Vodka and Gin. Learning new common names for plants like the Spider plant, which customers have requested by names such as the Airplane plant, the Helicopter plant and the Bad Mother plant, keeps him on his toes. When he gets a request for something he doesn't recognize, he invites the customer back to the greenhouse to see if they can spot the plant they have in mind. Four years ago, George was a high-speed machine operator in a packaging plant, growing vegetables and plants for a hobby. He worked eight to ten hours a day and all he could think about was getting home to his garden.

For the last two years George has been supplying Weaver Street Market with bedding plants. His greenhouses sit on two acres of open, sunny land outside of Goldston, not far from the Alston House where a Civil War re-enactment takes place each August. In the spring, George is busy growing starters for annuals, perennials and vegetables. He waters and prunes as he walks the length of each house tending Begonias, Sweet William, Shasta Daisies, purple basil, and many, many other house plants, garden plants and vegetable starters. He often sells lettuce, broccoli, cabbage and radicchio starters to visitors right out of his driveway. You'll find George and his pumpkins every Thursday in October at the Southern Village Farmers' Market.

Try this Recipe: Panzanella's Pumpkin Goat Cheese Cake
This is a delicious fall dessert, currently on the menu at Panzanella.
Ingredients
one baking pumpkin
2 1/2 Pounds goat cheese curd
(You can get this from Celebrity Dairy at the Farmers' Market.)
2 1/2 Cups sugar
6 whole eggs

The zest and juice from 2 lemons and 1 orange
1/2 Tsp nutmeg
1/2 Tsp cinnamon
Pinch of salt

    An alternative to Goat Cheese Curd

    1.5 Pounds of Regular Goat Cheese (Chèvre)
    8 oz. mascarpone
    8 oz. cream cheese

Bringing it all together:

Preheat your oven to 375 degrees.
1.) Bake the pumpkin either whole or cut in half until soft all the way through. Scrape out seeds and strings (keep - see roasting instructions below). Scrape out flesh and squeeze out excess water.
2.) Soften the cheese at room temperature.
3.) With a Mixer (or a heavy hand whip and strong arm) whip the pumpkin flesh, cheese and sugar until smooth.
4.) Next, add the eggs, one by one, until thoroughly incorporated. The batter should look smooth, shiny and light. It is important not to over whip, so keep your mixer in second gear.
5.) Add the rest of the ingredients.

Put in a spring form pan (the bottom lined with buttered parchment paper) and wrap the outside with saran wrap (or aluminum foil) to create a waterproof seal. Place in a water bath and bake at 375 degrees for about 45 minutes to an hour. When it is done, it will feel delicate but solid.
Serve with fresh whip cream.

How to Roast Pumpkin Seeds
Cleaning Pumpkin Seeds
1. Scoop out the seeds and pulp from the pumpkin.
2. Place in colander.
3. Under cold running water, remove the seeds from the pulp and strings.
4. Pat dry with a clean kitchen towel.

Roasting Pumpkin Seeds
1. Preheat oven to 300 degrees.
2. Combine 1 T oil or melted butter plus 1/2 t salt per cup of seeds. If you like, you can add other spices like pepper, paprika, and/or garlic.
3. Toss seeds with oil mixture until well coated.
4. Spread evenly on a cookie sheet.
5. Bake until golden, about 30 minutes, stirring occasionally.
6. Let cool on paper towels.

Review of Annual Meeting

Thanks to everyone who took the time out to join us at our Annual Meeting last night! It was a great meeting (with great food), and I'm so excited about the feedback everyone gave to the board. Weaver Street Market is so fortunate to have a great community of owners who care about the business, and, indeed, it is only because of the owners that we exist.

The past two years the board has used their time at the Annual Meetings to define a set of values for the business. (You can read the complete mission statement here
.) This year, the board has identified the following values that are impacted by the creation and distribution of community wealth:

• Reliance on community support
• Importance of accomplishing our mission
• Protect the co-ops financial stability
• Investment and surplus distribution links owners financially to the co-ops success
• Fairness with respect to consumer-owners and worker-owners

The board and owners spent time last night discussing how to actualize these values in regards to the price of shares at Weaver Street and the system of distributing the profits of the business.

This meeting was the very first step in a big discussion. And, the board intends to gather as much feedback from the owners as possible. You can expect much more on this topic in the print newsletter, on the website

Hello Beet readers. I'm sure many of you are familiar with Panzanella's series of Totally Local Dinners. Thanks to your support, we've been very encouraged and look forward to bringing you more in the future. You may wonder - if the products in the local dinner series are all locally produced, where do the products we use on a daily basis come from? Well, we get many of our products locally - so Panzanella serves "mostly" local dishes every day! Here are the details on a few of those products.

Now that brunch is up and running, we've been going through tons of those great Latta eggs that we sell so many of in the store. Between Panzanella, pastry, grocery and the hot bar, we cook around 10,000 eggs a week! That's one big Frittata.

When it comes to produce, Panzanella is a great place for local farmers to sell their bounty. Lately we've been getting some awesome blue potatoes from Tony Kleese. Their unique coloring makes them a beautiful addition to any dinner plate. Cane Creek Farm just brought some late season tomatoes. We love serving local tomatoes in October. John and Cindy down at EcoFarm grow some of the best arugula and greens around. And, what's a good meal without fresh herbs? Norma Burns puts so much TLC into her herb garden, it's almost a shame to chop them up. In addition to her usual oregano, chives and other staples, she brings wonderful lemon verbena and three kinds of mint. Perfect on top of a bowl of Maple View Farm vanilla ice cream. And while I may favor the more flashy flavors of ice cream, this vanilla ice cream is special! We sell more than five gallons a week in Panzanella, so I'm not the only one who thinks so.

Our meat and specialty departments also buy local. Giacomo's Italian Market in Greensboro makes some sausages and deli meats that are works of art. Pepperoni, salamis and other classic charcuterie are his specialty. We're thankful he makes the trip to see us. We' ve also recently found a local pork producer. Red Gate Farms raise pigs that conform to our antibiotic and hormone-free product policy. That, along with being local, makes them the perfect wholesaler for us.

So you see, we've incorporated many local farmers and producers into our everyday purchasing. When you work with products like these, it allows us to make dishes that highlight themselves with superior freshness and flavor. See you soon for brunch, lunch or dinner.
