| Friday Wine Tasting Takes a Break this Week |
No wine tastings this Friday, November 26, but be sure to check back on Friday, December 3 to taste new exciting wines available this holiday season. | Southern Village 5K and 1 Mile Family Fun Run/Walk |
Hope you’ve been hitting those hills to be ready for this new race to be held in hilly Southern Village on Sunday, December 12. This new annual event will benefit Habitat for Humanity in Orange County. The 5K starts at 2:00 and the Family Run/Walk starts at 3:00. Both races start and end at Weaver Street Market in Southern Village. The 5K course is 5000 meters (3.1 miles) and is USAT&F-certified. All performances will count towards state records and national rankings. Splits will be called at the one-mile, half-way and two-mile marks. There will be one water stop on the course near the half-way mark. Volunteers are needed, too! |

| On the Menu: THE Meal |
Well, Thanksgiving is only a couple of days away. For those of us in the restaurant business, this usually means one of three things. First, having to work on Thursday...again. Second, going to someone else's house and the only reason to go to the kitchen is to get another beer. Third, using our endless cooking knowledge to make the best Thanksgiving dinner our guests have ever had. (It should be noted that option three is the only guaranteed way to make sure you don’t have to clean up anything.) Over the past week, I’ve been taking an informal poll among the chefs at Panzanella as well as chef and ex-chef friends of mine. Thankfully, there aren’t many in the “I have to work” category. In the “going-to-someone-else’s-house” category, I found the most envious situation to be that of Panzanella chef, Lawrence Perkins. His family in Greenville, N.C. has so many capable southern cooks that feeding up to 40 of his family is not only a study in good cooking but also good planning. He is happy just to let the food roll out of the kitchen and enjoy himself. The highlight of the dinner is his father’s Turduken. Never heard of a Turduken? It’s a boned, stuffed chicken inside of a boned duck inside of a boned turkey. Roast at 225 degrees for up to 8 hours. You can buy them at selected butcheries or online, but Lawrence’s father makes his own from scratch. Now we know where Lawrence gets his knife skills. One of my ex-chef friends is the leader in the third category. After being a chef for twelve years, he chose a different career path and now works at N.C. State. Words can’t really do his cooking justice. He does his shopping on the Saturday before Thanksgiving and takes the whole week off work. He spends his days baking several kinds of pies, making sauces and garnishes, creating centerpieces for the tables and choosing linens. His event could give the Carolina Inn a run for their money. When the event finally goes down, he’s as cool as a cucumber, greeting his up to twenty guests with the knowledge that through skilled preparation and execution he’ll be able to actually enjoy himself. Often, chefs will get together and do Thanksgiving together. I had an experience once where three friends and I got together at a friend’s house and were each responsible for two dishes. Luckily, he had a big open kitchen with plenty of workspace. Chefs aren’t known for their frugal use of dishes and utensils in preparation - so we had to have a couple of clean ups DURING the day. When the dinner was finally ready, we didn’t even sit down. We ended up standing around the kitchen, plates in hand eating our meals. I guess we were so used to eating that way at work that it was comfortable for us. Most of the other guests sat down at the table. For us, though, the actual meal wasn’t the enjoyable part - it was the whole day together with friends. I saw it as a variation of the “It’s not the destination, but the journey” adage. So, however you spend your Thursday, make sure you enjoy the whole day - whether you’re catching up with family or spending quality time with dear friends. Cooking or not, the meal only lasts a little while compared to how much time it takes to get ready. |

| French Wine Tasting Dinner |

Join us Monday Evening, December 6, from 7 to 9 p.m. at Panzanella for a tasting of some of the most prestigious wines from France.
We’ll taste wines from regions as well known as Champagne, and those as unusual as Chinon. We welcome Bruno Arricastres of Oenophilia, a local wine distributor and importer, to take us on a wine tasting tour of this amazing country. Plenty of delicious food from the Panzanella kitchen will be served to complement these wonderful wines. The cost of this event is $45 per person; space is limited, so reserve early. These dinners usually sell out quickly! Please pay in advance and pick up a ticket for this tasting at either Panzanella or the customer service desk at Weaver Street Market in Carrboro. |
