The Christmas Bombe

Keep your eyes open for the stunning reappearance of the Christmas Bombe in our pastry cases this week, just in time for you to sample before the holidays. Originally a frozen French dessert, a bombe is usually formed by stacking layer upon layer of contrasting colors of ice cream or sorbet in a spherical mold. More modern interpretations are made in semi-spherical molds or even in loaf form, and in addition to frozen confections can also be made of any combination of light cake and mousse you can think of. The Christmas Bombe (continued)

WSM's Famous Stollen
The Christstollen is a traditional German Christmas bread full of fruit soaked in liquor, nuts, spices and lots of butter. The loaf is always shaped in a tapered oval and covered in powdered sugar to represent the baby Jesus in swaddling clothes. (You'll need a bit of imagination for this one.) The tradition of baking Stollen dates back to around 1400 A.D. Originally Stollen was a simple, plain bread because it was forbidden by the Catholic Church to use butter and milk in making Stollen. Lords and brothers Ernst and Albrecht of Saxony petitioned the Pope to rescind this “butter ban” in 1647, the Holy Father gave his permission, declaring that milk and butter could be used “with God’s blessing” in baking Stollen - after an appropriate tax was paid.

The Weaver Street Market Stollen recipe was adapted this year from several traditional recipes by our Bread Bakery Manager, Brian Cook. It is a very rich and tender bread with a texture more like shortbread, than yeasted, doughy bread. Ours contains golden raisins, currents, apricots (all organic!!!) and cherries soaked overnight in Sherry, then combined with a buttery dough and baked in our stone hearth oven. As soon as the loaves start cooling, they are brushed with Sherry and melted clarified butter, then rolled in organic granulated sugar and sprinkled generously with organic powdered sugar. What a treat!

The Weaver Street Market Stollen is available now through the holidays; baked twice a week on Sunday and Wednesday afternoons, so it’s available around 4 pm in the Carrboro store and first thing Monday and Thursday mornings at Southern Village. Stollen will keep for up to a month if tightly sealed in a thick plastic bag. Call either store to reserve your loaf now!

Chapel Hill Creamery Cheese and Wine Sampling
Stop by for a Chapel Hill Creamery Cheese and Wine Tasting, Friday, December 17 in the Carrboro store from 4:30 to 6:30 pm. You've seen these beauties at the Farmers' Market and at both stores. Come by and try these delicious, lovingly hand-crafted local cheeses, paired with the perfect wines. What a great holiday treat! In Southern Village, the regular Friday Wine Tasting will be held from 5:00 - 7:30 pm.

A bottle of wine, some cheese and a loaf of scrumptious WSM bread would make an easy gift basket!

Toys and Books and CDs ... Oh My!!
Follow the yellow brick road into The Wellness Department for some new CDs, books, and toys brought in for the holidays. We have a wide selection of magical children's books. Dragonology is an amazing and interactive book about dragons. We also have Lemony Snicket's Series of Unfortunate Events, Olivia, Curious George, and Calvin and Hobbes. A personal favorite are the Old Turtle books by Douglas Wood. The watercolor pictures are breathtaking and the story is touching and enchanting. Adult books range from Bill Byrson's new book, A Short History of Nearly Everything, National Geographic's Through the Lens, and a huge variety of cookbooks.

You know you're not in Kansas anymore when you listen to the assortment of New Age CDs we have on display. Both stores will be open regular hours through December 23rd. Southern Village opens at 7:00 am. Carrboro's Coffee Bar opens at 7:30 am and the store opens at 8:00 am. Both Southern Village and Carrboro close at 9:00 pm.
On Christmas Eve, both stores open at regular hours but close early at 6:00 pm. Both stores are closed on Christmas Day. On Sunday, December 26th, Southern Village opens at 7:00 am and Carrboro opens at 8:00 am. Both stores close at 9:00 pm.

On the Menu: Wintertime Cooking

Hello, Beet readers. After last week, I was glad that winter had passed us by. Shorts in December is my kind of living. This week has dawned to punish any enjoyment I may have felt. It's cold outside and I've got a cold in my head. As far as food goes, winter can pose many challenges to a chef. Produce is still available but where's the fun in having everything all the time in this smaller and smaller world we live in? Sure, I could get my hands on a strawberry, but it's from six thousand miles away and it tastes like styrofoam.

Summertime cooking is easy. Get some fresh veggies and make sure you don't ruin the freshness. Wintertime cooking takes thought and time. Last night, for instance, I made Chicken and dumplings (for my cold). It took a couple of hours but it was well worth it. Maybe it's because it gets dark at five o'clock that we don't mind being in the kitchen. In the summertime at five, it's time to go out and play until nine. Dinner should only take ten minutes on the grill.

So here is a cold weather favorite that takes lots of time to cook but only a little time to prepare. If you've got a crock pot at home that you haven't used in 12 years, use it. If you don't have a crock pot, you can do the same thing on your stovetop on a lazy Sunday afternoon. The Beet does not recommend leaving your stovetop on while you go to work. But if you can retrieve that crockpot, forgotten in some lost corner of a cabinet, then load it up before you leave in the morning and when you get home, it's like your chef has been hard at work all day. Start with a big cheap cut of meat (like a chuck roast or a bottom round roast), throw in a bag of those baby carrots, a couple of little onions and a couple of celery stalks. Now put in some water, red wine, bay leaf, and some whole stems of rosemary and thyme. About 5 whole peeled garlic cloves couldn't hurt either. Don't forget a little salt and pepper - not too much though. As a wise chef told me once, “you can always add more, you can never add less.“ Turn your pot on to whatever setting is right, and go to work. On the way home stop by Weaver Street Market and get a nice loaf of rustic and some more red wine. When you get home, open the pot up and pull the stems of the herbs out. The leaves will have fallen off and softened up into a nice garnish. Open your wine and cut your bread. It's probably dark out already so go ahead and eat. Hopefully you'll have just enough to take to work the next day to make your co-workers jealous.

Good luck with your winter eating. Winter is also a great time to eat out. Especially at Panzanella where we've got plenty of good red wine. To get over the mid-week hump, come take advantage of Wine Wednesdays (see below). Take care and we'll see you soon for lunch, brunch or dinner.

Join us for a tasting of wines from Italy. We'll explore wines from regions such as Campania, Puglia, Veneto, and Tuscany. Now's your chance to explore Italian wines. We welcome Jim Stock and Mike Tiano of Haw River Wine man, a local wine distributor and importer, to take us on a wine-tasting tour of this amazing country.
