Tension, nerves, anxiety, low energy... Both stores will be open regular hours through December 23rd. Southern Village opens at 7:00 am. Carrboro's Coffee Bar opens at 7:30 am and the store opens at 8:00 am. Both Southern Village and Carrboro close at 9:00 pm. On Christmas Eve, both stores open at regular hours but close early at 6:00 pm. Both stores are closed on Christmas Day. On Sunday, December 26th, Southern Village opens at 7:00 am and Carrboro opens at 8:00 am. Both stores close at 9:00 pm. On New Year's Eve, both stores are open regular hours. On New Year's Day (Sunday), both stores will be open from 9 am until 9 pm. |

| On the Menu: Gifts for the Foodies in your Life |

Well, the holiday season is here. Hopefully everyone is doing their part to jumpstart the economy. One good way is to buy stuff for chefs or any foodies you may know. Not only will they love your thoughtfulness but you may learn a little in the process. On the book front, there are very few that are considered must-haves. The first is On Food and Cooking: the Science and Lore of the Kitchen by Harold McGee. Written in 1984, it has been revised and reissued for its twentieth anniversary. Chapters are broken down by ingredients, with other chapters concentrating on cooking methods. One is called The Four Basic Food Molecules. This book is to cooking as the dictionary is to writing. Questions can be answered like how Gluten works in bread. Does "searing" meat really seal in juices? The chapter on sugars and chocolate can lend some sanity to the unpredictable world of pastry. Another must have is The Professional Chef by the Culinary Institute of America. At over 1000 pages, this is the foundation of knowledge for almost all classically trained American chefs. Many cooking schools other then the CIA use it as their textbook. It has photos and step by step processes for hundreds of kitchen techniques. It is a reference for ingredients and has hundreds of recipes which are updated with every edition to reflect current cooking trends. For a lighter version of this book, a gift for the home cook would be Cooking at Home with the CIA. It's cheaper and speaks a simpler language. A great cookbook is the French Laundry Cookbook by Thomas Keller. Considered by some to be the "best" chef in America, he has written a wonderful cookbook. The recipes here aren't for the faint of heart. Chef Keller takes a Dean Smith like approach to cooking: freedom through discipline is his way of working. Without perfect technique and discipline, details get lost and flaws are created. This keeps the experience of eating from being what it could be. Along with books, there is always a mountain of toys that chefs like to play with. In the way of knives, I'm a fan of the offset serrated knife. It's a great utility knife for all over the kitchen. The serrated blade is perfect for bread, melons and tomatoes. The offset part keeps you from cracking your knuckles on the cutting board. Speaking of cutting boards, check out some of the Chinese cutting boards that are very popular. They're usually round, 18-20 inches across and 4 or so inches tall. The height is good for getting close to what you're working with. The size makes them good for moving to where the food is. They also look really cool. And for the chef with everything, you can get the best blender ever. The Vita-Mix blender simply has no peer. Whatever these guys did makes perfectly mixed pureed food in seconds. I've heard it's the blade angle along with the shape of the sides of the pitcher. At almost $400 though, you better use it often to justify the cost. If smoothies are your game, then it's well worth it. Well, hopefully I've helped you decide what to get your chef, or go ahead and get yourself a present. You deserve it and you can use it to make some food for your loved ones - which is a present in its own right. Happy Holidays and happy cooking. |

| Wine Tasting Dinner: Wines from Italy |
Join us Monday, January 17, from 7 pm to 9 pm, for a tasting of wines from Italy. We'll explore wines from regions such as Campania, Puglia, Veneto, and Tuscany. Now's your chance to explore Italian wines. We welcome Jim Stock and Mike Tiano of Haw River Wine man, a local wine distributor and importer, to take us on a wine-tasting tour of this amazing country. Plenty of delicious food will be served from the Panzanella kitchen to complement these wonderful wines. Make your reservations early! Our wine-tasting dinners always sell out! $35/person.
