| The Real Tomatoes are Here! August means hot. Hot means what? The answer to the question everyone's been asking since May, "Where are the good tomatoes?" Here. Now. Get 'em while they're hot. While we were lucky enough to enjoy local pesticide-free hot-house toms in the off-season, now's the time for the real deal. Our man, Ken Dawson, of Maple Spring Gardens will keep us supplied with red slicers, romas, and special varieties of REAL organic tomatoes. More... |

| The Real Tomatoes are Here (continued) | |||
Mr. Alex Hitt from Peregrine farms will sometimes sneak in a couple of flats when possible. Look for the Pinks, yellows, grapes, Cherokee Purples and the blessed SUNGOLD! I had my first sungold of the season yesterday and ahh the memories! I went 20-some odd years thinking I did not like tomatoes. It was during my time at that "big fancy store across town" that one of the fine aforementioned farming gentlemen insisted that I taste one. I was then converted to a tomato lover, for that made me realize the difference between those things you get on a sandwich at a restaurant in the winter (NOT what I'd call a REAL tomato), and what you'll find at the farmers' market or WSM during the summer. Apparently, you know what I'm talking 'bout. That's why you start up in May...I' ll bet I used to make Ken real mad when I refused to put "Pink Girl" on the sign because I thought it was sexist. Maybe it is, maybe it isn't, but that's their name, and they sure taste fine.Other treats that the hot weather brings include local watermelon, and peak-season freestone peaches from Pennsylvania and West-by-God Virginia. These are worth waiting for. We are also working on a deal for the Biodynamic (super-organic) grapes from Marian Farms! They do all our raisin snack packs and canisters in the produce department. I also used to think I did not like raisins. Working in natural foods changed that, too. Now, for the first time since last year, I re-present to you the famous SHILOH'S CREAMY SUNGOLD PASTA! I've heard things already, and since last year I was a little late in procuring this recipe for you (it went out in September), I wanted to give you all a fair shot at it, when the toms and the basil are plentiful. Don't forget the shrimps and the chilled wine! Love, w |

Local chef and cooking instructor, Carol Barrow, resided in the center of Florence and in the province of Tuscany for ten years where she learned regional cooking from the masters: restaurant owners, farmers, family and friends. She owned Ristorante Vien under the Volta dei Peruzzi in Florence for four years. Caroleena cracks the mysterious code of Tuscan cooking and translates her very special language into easy, delicious and healthy recipes. She will be sharing recipes and tips with us from time to time. Caroleena is available to cook for you in your home. Call her at 960-8875.Insalata Caprese (Fresh Mozzarella, Tomato and Basil Salad) You know this recipe! It is so easy and delicious and goes just fine with summer! Fresh ingredients are all you need. Fresh mozzarella Fresh, ripe tomatoes (very red and very hard - a beefsteak works well with this) Fresh basil Extra virgin olive oil Salt freshly ground black pepper Slice your mozzarella the same size as you will slice your tomatoes. Start arranging your cheese, tomato, and basil in alternating slices in your serving dish. Add salt and pepper. Drizzle on as much extra virgin olive oil as you wish. White or wheat bread goes perfectly with this dish which you can use as an appetizer or a main course. Rip and Dip! Buon Appetito! Don't forget - always cook with love and DON'T BE CHEAP |
| Local Producer: RagApple Lassie Vinyards, Boonville, NC |
What struck me most as we stood in the vineyards of RagApple Lassie with the owner, Frank Hobson, was how a good farmer can grow anything. Frank is a third generation tobacco farmer who switched to growing grapes for winemaking as the tobacco market waned in North Carolina. Now he travels up and down the vineyard in an very old, very beat up pickup truck every morning to see what the vines need: water, pruning, or help in some way. Gently lifting the tiny seed buds, he shows us the little brown caps that must fall off the growing grape. One summer, unusually wet weather prevented the little caps from falling and some of the grapes were warping. Frank and his field hands discovered that they had to gently shake the vines that year to make the caps fall. Those caps were so small that if I was in charge of those grapes they all would have gone bad. This kind of communing with their crop is what makes a farmer good. And good grapes will make great wine.RagApple Lassie is one of a growing number of vineyards and wineries in North Carolina. They're not a fancy place just yet, everything has a very down-to-earth touch from the big utilitarian tasting room, to the delightful cow motif inspired by a champion cow named RagApple Lassie that Frank owned many years ago. Their wine maker, Linda King, is self-taught, down from Ohio, but the wines they are producing are winning awards. RagApple Lassie will be one of the featured wines at our North Carolina Wine Dinner on August 15 at Panzanella and the lunch stop on our first wine tour August 6! |

After Hours has grown to be one of the "best of the best" nights in Carrboro. Lastly, please enjoy the fountain from its perimeter. Thank you for your help in making this event safe and fun for everyone.
