Hurricane Katrina Relief efforts continue at Weaver Street Market
Over One Thousand Dollars Collected at Registers
By Christy Raulli, WSM Board Member

Through the collection jars at the registers, our generous owners, customers and employees have donated $1300.00 to the local chapter of the American Red Cross in less than two weeks. As of today, Tuesday, the money collected at our registers will be used to support evacuees currently in the Triangle. We are contacting the shelter in Raleigh to determine in what way we can be most helpful, and will continue to share information as we find out. If you know of evacuees staying within shopping distance of Weaver Street Market, please contact me at 913-1588 for a gift certificate to the co-op. And, don't forget about the Gulf Coast Fundraiser at Panzanella on Monday, September 26. Tickets to the buffet-style dinner are only $35, including drinks. Every cent of the ticket price goes directly to help out folks affected by the Hurricane, so both your belly and your heart will feel great!

To celebrate the cultural heritage of the New Orleans area we'll be featuring recipes by some natives. This recipe is from Windy Willer our new Training and Development Manager. Windy has worked at Weaver Street Market for over ten years and grew up in Opelausas, Louisiana where currently many people from the city have taken refuge. Look for favorite recipes from our other staff with roots and families in Louisiana for the next couple weeks.

2 - 3 lbs chicken in 2 inch pieces
1/2 cup oil
2 cups finely chopped onion
1/2 cup chopped peppers (a mix of jalapeno and red bell)
1-cup fresh parsley
1 cup chopped green onion
2 lb andouille sausage
3 cups long grain rice
7 1/4 cups chicken stock
3/4 white wine
1T chopped garlic
Copious amounts of Tabasco

In deep pot, brown chicken in oil. Remove chicken; add onion, peppers, parsley and green onions. Sauté till onions are clear. Add remaining ingredients and chicken to pot. Bring to a boil and reduce until there is no longer liquid well above the surface of other ingredients. Cover and let simmer on low until rice is done, about 40 minutes.

Timberwood Organics: Ray and Maria Christopher

Ray Christopher, his wife Maria, her sister and their collective children work the 4-6 acres around their house that make up Timberwood Organics. They plant by hand and are certified organic. They squeeze an amazing amount of life and service out of their fields.

In addition to selling wholesale to stores like Weaver Street Market, Timberwood Organics is a Community Supported Agriculture which has 100-150 member households. This is their fourth season delivering organic vegetables to members' homes and this year Maria will add fresh baked bread to their offerings. Ray also keeps a dozen beehives to fertilize the crops. Recently, Ray purchased ten acres up the road to be used as a distribution hub for farmers in our area and the eastern part of North Carolina. This is an important development for local and regional organic farmers. It means a central location for collection, storage and distribution of produce with more attention to sales and quality and more input from the growers. Consumers in our area should see increased availability and higher quality organic produce. This is a great service to our community.

We'll take you on a tasting tour of this enchanting country with the help of our good friend and resident Frenchman, Bruno Arricastres of Oenophilia Distributing. Bruno makes tasting wine fun and exciting, so join us for an evening of great food and wines. Plenty of delicious food will be served from the Panzanella kitchen to complement these wonderful wines. The cost of this event is $35 per person; space is limited, so reserve early.
