Eggplant with Ground Beef

INGREDIENTS:
• 1 1/2 lbs. ground Beef (This week's Owner's
Special: locally-raised grass-fed Ground Beef 80/20 lean, on sale $4.99/lb,
reg. price $5.99/lb, save $1.00/lb!)
• 1 med. Onion, diced
• 1/2 c. Bread Crumbs
• 1 Eggplant (This week's Produce
Special:LOCAL & ORGANIC Zucchini, pick of the season! $1.99/lb!)
• Salt and Pepper to
taste
• 1 (14.5 ounce) can diced Tomatoes
• 1 sprinkle of Parsley
DIRECTIONS:
1. Peel eggplant and
cut into thin slices.
2. Brown ground beef; add diced onion.
3. Add 1/2 cup
bread crumbs, tomato sauce, parsley, salt, pepper and 2 tablespoons
grated cheese.
4. Layer eggplant, ground beef mixture, eggplant, ground
beef, etc.
5. Cook in 350 degree oven for 45 minutes. IF the weather is too hot to use oven, use your slow cooker; let it cook on low setting for 6-7 hours. Yum!
