Tilapia sauteed with Veggies

• 1 medium sized Onion (red or yellow, whatever taste you prefer)
• 1 Zucchini sliced
• 1 Yellow Squash (
• 1 medium Carrot, julienned or sliced
• 1 Tilapia Fillet
• 1/4 cup of Orange Juice
• 1 tbsp of extra virgin Olive Oil
• black pepper & salt to taste
1. Heat pan to medium/medium-high heat; add Oil
2. Add Onion and sauté. When Onion begin to become translucent, add Carrot until it starts to get tender, also add diced Zucchini and Squash.
3. Take vegetables out and place to the side.
4. Re-oil pan if you wish; add Tilapia fillet and let cook for a few minutes then flip to other side.
5. Add Orange Juice, season with salt & pepper and let simmer, so the sauce can reduce.
6. After a minute or two, re-add the vegetables mixture and coat with the orange sauce.
7. Plate however you wish.
