Suzanne and Ricardo Fernandez, owners of Lomo Grill, Waynesville, have captured a bit of Haywood County magic in their line of Chef Ricardo’s Authentic Appalachian Tomato Sauces. The owner of downtown Waynesville’s popular Lomo Grill, Ricardo has been making tomato sauces for the restaurant from locally grown Haywood County tomatoes for years. In 2008, when the Haywood Grown promotional program had a product competition for the best tomato products using Haywood County tomatoes, Ricardo thought, why not put the great tasting tomato sauces from Lomo Grill in the competition and see what happens? Not only did Ricardo’s sauces win awards in the Buy Haywood contest, but a new business was launched, Chef Ricardo, LLC.
Ricardo’s sauces are traditional European style tomato sauces—no preservatives, no artificial additives. When you open the jar you see herbs and tomatoes. The aroma is seductive. Ricardo’s tomato sauce recipes are all staples at Lomo Grill where customers have come to expect a menu filled with authentic ingredients based on local foods.
Ricardo says quality is the focus for Chef Ricardo’s Authentic Appalachian Tomato Sauces. They are 100% vegan with no sugar, no sodium and no tomato paste added. And while the Fernandezes use a co-packer to professionally prepare the sauces in an FDA-approved food preparation facility, they bring many ingredients in with them to ensure the highest quality of the end product. Appalachian grown fresh tomatoes are the sauces’ base as much as possible.
