 Poached Pears in Wine

  4 large pears
  1 bottle pomegranate wine
  1 stick cinnamon

1. Preheat oven to 400 degrees.
2. Wash & peel pears, then core them from the bottom using a small spoon or melon baller. Be sure to remove all seeds.
3. Place pears in a deep baking dish or ovenproof pot.
4. Drop cinnamon stick in pot and pour wine over pears. Pears should be covered.
5. Place dish in oven on middle rack and bake until pears are tender, about one hour.
6. Remove liquid and reduce in saucepan on stovetop until you get a syrup-like consistency or the liquid has reduced by half.
7. Pour sauce over pears and serve as a last course with a variety of soft bloomy-rind cheeses.
