Mango – Berry Cheesecake Pie
This recipe comes from our Demo Coordinator, Lisa Woodward. Serves 8.
1 WSM pie crust
2 8 oz. bars Organic Valley Neufchatel Cheese - softened
½ c. powdered sugar
1 tsp. vanilla extract
3 Tbsp. milk
1 c. blackberries
1 c. strawberries – quartered
1 c. ataulfo mangos – diced
½ c. strawberry or grape jelly
– Preheat oven to 400 degrees. Puncture bottom and sides of crust and
place in oven until crisped and evenly browned. About 7 to 10 minutes.
Allow to cool.
2- Meanwhile, in a bowl, beat together Neufchatel, powdered sugar, vanilla and milk until smooth and creamy.
3 – Spread Neufchatel mixture into the bottom of the cooled piecrust.
4 – In another bowl mix together blackberries, strawberries and mango.
5 – Melt jelly and pour over fruit. Toss to coat and create a glaze on fruit.
6 – Spoon fruit over Neufchatel mixture to finish filling piecrust.
7 – Refrigerate and serve chilled – topped with whipped cream.
