Heirloom Tomato Stack

You'll need:
several heirloom tomatoes, assorted sizes and colors
a handful of small Sungold tomatoes
a handful fresh, whole basil leaves
fresh mozzarella, thinly sliced, or goat cheese crumbles
olive oil
salt, pepper
balsamic vinegar

Reduce one cup of balsamic vinegar over low heat until half a cup remains. Slice your assortment of tomatoes (except the SunGolds). Salt and pepper each tomato slice on one side to taste. Additionally, drizzle a little olive oil over each slice. On a plate, layer the tomato slices on top of each other to create a "stack," varying sizes and color, while layering basil leaves and mozzarella slices between each tomato slice. Continue layering until stack is desired height. Toss the Sun Golds around the plate. Finally, drizzle the reduced balsamic vinegar over your stack and the plate. Serve at room temperature.
