Caramelized Sweet Potato Wedges
 
You'll need:
2 tablespoons canola oil
3 medium sized sweet potatoes (leave peel on)
3 oz. Orange juice
1/4 cup brown sugar
2 tablespoons white sugar
1/2 tablespoon orange zest
1 cup water
salt & pepper to taste

Cut the sweet potatoes into wedges. Saute the potatoes in olive oil, then add orange juice and water. Cover until potatoes are tender, about 5 - 10 minutes. When the liquid has evaporated, add the sugars, salt, pepper, and orange zest. Stir until sugar caramelizes. Serve.
 
 
 
Homemade Caramel Sauce

You'll need:
3/4 cup of sugar
3 tablespoons of water
1/4 teaspoon of lemon juice
1 tablespoon of unsalted butter
3/4 cup of heavy cream

Bringing it all together:
Combine sugar, water and lemon juice. Melt sugar over medium to high heat, allowing the sugar to boil until golden brown. Reduce

heat to low and add butter, stirring constantly until melted. Add cream while stirring until well combined. Serve warm or refrigerate and re-heat before using.
