Simple Stuffing

¼ cup butter
½ cup chopped celery
¼ cup chopped onion
3 ½ cups stuffing mix
½ cup fresh/thawed cranberries, halved; or ¼ cup dried cranberries
½ chopped pecans
½ tsp salt
¾ tsp poultry seasoning (make your own: ¼ tsp sage, ¼ tsp thyme, a dash of marjoram, rosemary, black pepper)
½ cup broth

Heat butter; sauté celery and onions until golden.  Combine stuffing mix, cranberries, pecans, and spices in a large bowl.  Add sautéed vegetables and pan drippings and toss lightly.  Sprinkle broth onto mixture and mix well.  Pack lightly into turkey just before it is ready to roast, or bake in a casserole dish at 350 degrees for 45 minutes.  (Optional: squirt on turkey drippings when you baste the turkey.)
