Mango Chicken

• 8 Chicken Breasts, boned
• 2 tbsp. Flour
• 2 med. Onions, sliced thin OR 6-7 Spring Onions, diced
• 1 c. rich Chicken Stock
• 1 ripe Mango, peeled and sliced/diced
• 2/3 c. Cream
• 2 tbsp. Butter

1. Rinse the Chicken. Cut out the Chicken to separate the breast pieces. (To see a detailed instructions on that procedure, click here .)
2. Season chicken with salt and pepper. Dust with flour. Brown chicken in butter, remove.
3. Saute onion.
4. Add mango pieces to the Onion.
5. Add chicken to the Onion and Mango. Cover and simmer 35 minutes until Chicken is tender. Stir in cream and serve.
