Cod fillet in a Cheese Sauce
• 4 Cod fillets
• 6 1/2 tbsp Sour Cream
• 2 tsp wholegrain Mustard
• 4 Tomatoes
• 5 oz sharp Cheddar
• 2 oz Gruyere Cheese
• Salt and  Pepper to taste

1. Season the fish with a generous amount of salt and pepper.
2. Slice the tomatoes and place them on top of the cod.
3. Mix sour cream with coarse mustard. Shred the cheese.
4. Add the shredded cheese to the sour cream, place equal amount of the mixture on top of the each fish.
5. Bake in a preheated oven at 400 F for 25 minutes in a large baking dish.
It might take less time depending of the thickness of your fillet.
