Tilapia with Wine, Asparagus and Tomatoes

INGREDIENTS:
• 4 (4 ounce) Fresh farm raised tilapia fillets
• salt and pepper to taste
• 4 tablespoons Organic Earth Balance Butter
• 1 lemon
• 3 cloves garlic, pressed
• 1 cup white Alcion Chardonnay wine
• 4 fresh basil leaves, chopped
• 1 large tomato, chopped
• Fresh Asparagus

DIRECTIONS:
1. Preheat ovet to 425 degrees.
2. Place the tilapia fillets side by side on a 9x13 pan. Season each one with salt and pepper. Place one tablespoon of butter on top of each piece of fish, and sprinkle garlic, basil and tomato. Pour the wine over everything.
3. Place the pan in the preheated oven, and bake for 20 minutes, or until fish flakes easily with a fork.
Great with herbed mashed potatoes or rice pilaf.
