David and Faythe DiLoreto run Fading D Farm in Rowan County, the only water buffalo farm and creamery in North Carolina. Water buffalo aren’t like the bison of the American West; they look more like giant cows with curved horns and a mop of hair. Their milk is used to make “Mozzarella di Bufala” or buffalo mozzerella. The DiLoretos started the farm after a trip to Italy, and their inability to find the delicious cheese on their return.
Last week our staff visited the farm to meet the herd and learn about the cheese-making process. Below are some pictures of the visit. We’ll have a blog post soon!
