This is great for a quick and easy appetizer when you have guests over or as a simple weekend dinner for two. Plump red cherries paired with soft, creamy mozzarella make a great combo!
- 2 cups Red Cherries – pitted and cut in half
- 2 Tbsp. Sugar
- 1 Tbsp. Fresh Orange Juice
- 1 tsp. Fresh ginger or ¼ tsp ground ginger
- ½ loaf Weaver Street Market Baguette – sliced OR substitute your favorite gluten-free bread
- 2 Tbsp. olive oil
- Fresh Mozzarella – cut in slices.
Preparation:
1) In a heavy bottomed pot add ½ of the cherries, sugar, orange juice and ginger.
2) Cook over medium heat, stirring often, until cherries have broken down and sauce is thickened. Set aside to cool slightly.
3) Meanwhile, brush baguettes with olive oil and toast under broiler in oven, turning once, until both sides are lightly browned. Set aside.
4) When cherry sauce is cooler but still warm, stir in remaining cherries.
5) Top each piece of toasted baguette with two halves of mozzarella and place under broiler just until cheese is melted.
6) Top each piece cheese toast with warm cherry sauce and serve immediately.
Serves 4 to 6.
