A delicious and easy spread from Lisa, our Demo Coordinator.
Ingredients:
- 1 c. of spicy & sweet goat horn peppers
- ½ c. sun dried or roasted tomatoes
- 6 cloves roasted garlic
- ½ c. olive oil
- sea salt
- ¼ to ½ c. grated parmesan cheese
- freshly ground pepper
Directions:
1) Remove peppers from brine and pat dry.
2) Puree in a food processor or a blender: peppers, tomatoes, garlic, and ¼ cup olive oil. Blend till smooth but slightly chunky.
3) Pour into a bowl and stir in remaining olive oil, salt, cheese, and pepper.
4) Serve with toasted baguette, crackers, or toasted pita bread. Refrigerate in jar or airtight container. Will keep for 7 to 10 days.
