A simple and healthy meal that will satisfy you for a long time!
Ingredients:
- 2 Tbsp. olive oil
- 1 onion, 1/2 inch dice
- 2 smaller sweet potatoes, 3/4 inch dice
- 1/2 c. water
- 1 package Simply Organic fajita simmer sauce
- 1 can black beans, drained
Directions:
1). Heat olive oil in the saute pan over medium heat.
2). When hot add the onion and saute until transparent.
3). Add diced sweet potatoes and water to pan. Cover and cook until potatoes are fork tender. Add a little more water if needed to keep potatoes from sticking.
4). Add simmer sauce and beans and cook, uncovered, until heated through and thickened.
