Mediterranean Deli has been a Chapel Hill institution for almost three decades, delighting diners with the authentic flavors of the Middle East. Since opening in 1992, owner Jamil Kadouras has expanded the restaurant several times. In the fall of 2009, using equipment shipped from Israel, Kadouras and his staff began to make fresh pitas using locally milled flours from Lindley Mills.
Kadouras stresses that despite the specially-ordered oven and mixer, the process is still very small scale and hands-on. “The machinery is not automatic. We do it by hand.” The white, whole wheat, and Zaatar pitas are baked fresh using certified organic and Kosher flour from Lindley Mills in Graham, NC, a family-owned mill that dates back more than a century.
Of the pita project, Kadouras says, “It’s been wonderful,” and our tastebuds agree.
