Homayoon Ershadi grew up in Iran where his mother would make a delicious drink in small pitchers to refresh her family during the hot summer months. The recipe – named Jabin – is a twist on an ancient Persian beverage which is made with only seven natural ingredients including fresh mint, cucumbers, unfiltered apple cider vinegar, pink Himalayan salt, and raw cane sugar. As an avid cyclist and runner, Homayoon began regularly making Jabin to hydrate his body and fuel his adventurous lifestyle. Crisp, refreshing, and easy drinking, he found it was a fantastic way to replenish electrolytes after his frequent bike rides or runs. Now living in the Triangle area of North Carolina, Homayoon no longer makes Jabin in small pitchers – he now makes it in small batches at the Piedmont Food Processing Center in Hillsborough. And Jabin is still made by hand with a lot of love and help from Homayoon’s parents, brother, and his beverage team.
