We make our handcrafted bread with organic flours from Lindley Mills in Graham, North Carolina, and from Carolina Ground in Asheville. Our traditional hearth loaves include both naturally leavened (sourdough) and yeasted varieties, all made without the use of preservatives. The use of preferments provides longer fermentation times that allow flavors to develop. Our French baguettes and Italian ciabatte are made according to authentic, Old World recipes, and every loaf is shaped by hand. Pan loaves such as sunflower, 7 grain, and Wonderful white bread make great toast and tasty sandwiches. Our extensive selection of pastries ranges from early morning muffins to mid-day cookies to late night pie. Our team of bakers makes everything by hand: buttery croissants, moist chocolate brownies, delectable tarts, and scrumptious frosted cakes, including some vegan selections. We use local eggs, milk, and cream as well as locally milled organic flour and the freshest seasonal fruits. Our traditional recipes and time-honored methods produce pastries that taste homemade.
