
Our Concha Cakes are a collaborative creation by four brothers from Mexico for our Cinco de Mayo celebration. The Concha Cakes also celebrate the Martinez brothers’ heritage as bakers. Three are Weaver Street bakers—Memo and Chivo are bread bakers; Nolberto, a pastry baker. Pablo, the oldest brother, is a former Weaver Street baker, who runs the family’s bakery in Mexico.
Cinco de Mayo festivities around the world join Mexico in celebrating the anniversary of its victory at the Battle of Puebla during the Second French Intervention. The Cinco de Mayo festivities in the US have become a popular celebration of Mexican heritage and culture.
Esteban Santos, also a pastry baker at Weaver Street, is from Puebla City and his heritage links directly to the Battle of Puebla, where his ancestors fought in the battle to defeat the French.
Our Concha Cakes were inspired by a photo Pablo sent from Mexico to his brothers of a bakery case showcasing beautiful conchas filled with strawberries and cream. The cakes feature our popular raspberry conchas, a traditional Mexican sweet roll inspired by Memo and Chivo and now made daily by our bread bakers. The conchas are sliced and filled with fresh strawberries and light fluffy cream by Nolberto, Esteban, and our pastry bakers.
