Joe Parker, better known as JP, founded JP’s Pastries with a mission of changing the world’s view on gluten-free pastries. He’d grown up with a wheat allergy and attended culinary school to learn about gluten-free baking. He wanted to be able to take a gluten-free cake to a party and have no one able to tell the difference.
JP creates his own recipes using blends of gluten-free flours such as rice, sorghum, and tapioca. Each recipe is tested repeatedly until JP is happy with both the flavor and texture. JP and two coworkers make all the pastries themselves, by hand, from scratch. They bake every day in a certified kitchen that JP built onto his home in Raleigh.
