After working at local hotspots like Lantern, Neal’s Deli, and The Barbecue Joint, Sam Suchoff went whole hog and opened The Pig, a pork-centric southern eatery, in October of 2010. Working with a small co-op of NC hog farmers, The Pig starts with whole hogs raised on pasture without the use of antibiotics or added hormones and turns out pulled pork, hotdogs, bacon, bologna, ham, smoked pork chops, and more.
We were impressed by what Sam was doing at The Pig and wanted to help get his food to our customers, so in 2014 we invited The Pig to move its hot dog production into the Weaver Street Food House kitchen. In return, Sam and The Pig have helped Weaver Street transition our raw pork cuts to a 100% locally sourced program. We have continued working together to produce more local meat options for our shoppers, including bacon and barbecue.
