Chef Julius West’s love of food developed as a child traveling the U.S. as the son of an Air Force Sergeant. While his dad was serving, Julius spent hours in the kitchen with his mom. His dad’s service exposed their family to world cultures and cuisines, and his mother inspired his love for cooking. She taught Julius that thoughtfully preparing traditional, homestyle dishes is a way to show others care and respect. She was happiest when sharing her food with family and friends.
These memories encouraged Julius to open his food truck in 2012, Sarge’s Chef on Wheels, which was inspired by and dedicated to his parents. Many menu items were influenced by favorite dishes from the places they had lived and experienced thanks to military life. However, Julius’ delicious shrimp and grits quickly became the most popular dish on the menu.
“Customers were always asking how to make the shrimp and grits.” Julius says. So, they decided to bottle the popular sauce to make it easy for anyone to enjoy this delicious, time-honored regional favorite at home. When the pandemic hit, they decided to close the food truck and dedicate their time and talent to their shrimp and grits sauce.
