This is a a great recipe that uses local ingredients and doesn’t take much time to make. Kids will love it, too! Sale items are Owner’s Specials through February 16, 2016.
- 1 package Melina’s Fresh Gnocchi – Sale for owners $6.49/12 oz. Save $1.50 – cooked per package directions, drained and set aside
- 1 tbsp. olive oil
- 5 strips The Pig Local Carolina Bacon, finely chopped
- 22 oz. Weaver Street Market Marinara Sauce – Sale for owners $6.49/22 oz. Save $1.50
- ½ block cream cheese or Neufchatel cheese – cut into small cubes
- ½ c. grated Parmesan
Directions:
1) Cook Melina’s Gnocchi per package directions, drain, toss with olive oil and set aside.
2) In a sauté pan, over medium high heat cook chopped bacon until most of the fat has been rendered. Drain off all fat except for about 1 tablespoon.
3) Reduce heat to medium and add marinara sauce to the pan and continue to cook until heated through.
4) Reduce heat to low and add both types of cheese to the pan. Stir until cheeses have completely melted into sauce.
5) Add cooked gnocchi to the pan and toss to combine. Serve with more Parmesan if desired.
Serves 4.
