Ingredients:
- 1 tbsp. olive oil
- 4 cloves garlic, chopped
- 28 oz. salsa – choose your favorite salsa verde or salsa roja
- Coarse sea salt, to taste
- 1 Weaver Street Market rotisserie chicken, skinned and shredded
- 4 c. tortilla chips – or you can make your own fried tortillas
- ¼ c. sour cream
- ¼ c. crumbled feta cheese
- Jalapenos – optional
- Cilantro, to garnish – optional
Instructions:
- Combine olive oil and garlic in a large, nonstick skillet.
- Cook over medium heat until sizzling, about one minute.
- Add salsa and heat until aromatic.
- Turn heat down and simmer, stirring often, until salsa coats the front and back of a spoon.
- Taste and add salt as needed.
- Add chicken and stir until well coated by salsa and heated throughout.
- Add jalapenos (optional) and stir for one minute.
- Add 3 cups tortilla chips and stir about 1 minute, until chips are softened but not mushy.
- Remove skillet from heat.
- Spread sour cream on top of mixture.
- Sprinkle with feta, cilantro, and add remaining tortilla chips.
- Serve immediately.
